Sweet Potato Cheesecake Mini Pies 🍠😋😋
Ingredients:
For the Crust:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/4 cup unsalted butter, melted
For the Sweet Potato Cheesecake Filling:

1 cup mashed sweet potatoes (about 1 medium sweet potato)
8 oz cream cheese, softened
1/2 cup granulated sugar
1/4 cup packed brown sugar
1/2 cup sour cream
1/4 cup heavy cream
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
Pinch of salt
For the Topping (Optional):

Whipped cream
Additional cinnamon or nutmeg
Directions:
Prepare the Crust:

Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until the mixture resembles wet sand.
Press the mixture evenly into the bottom of each muffin cup to form the crust.
Prepare the Filling:

In a large bowl, beat the softened cream cheese until smooth and creamy.
Add the granulated sugar, brown sugar, sour cream, and heavy cream. Beat until fully combined.
Mix in the mashed sweet potatoes until smooth.
Add the eggs, one at a time, beating well after each addition.
Mix in the vanilla extract, ground cinnamon, ground nutmeg, ground ginger, and a pinch of salt until well combined.
Assemble and Bake:

Spoon the sweet potato cheesecake filling over the prepared crust in each muffin cup, filling almost to the top.
Bake for 20-25 minutes, or until the centers are set and the tops are slightly puffed.
Turn off the oven and let the mini pies cool in the oven with the door slightly ajar for 1 hour.
Remove from the oven and refrigerate for at least 2 hours or until completely chilled.
Serve:

Top with whipped cream and a sprinkle of cinnamon or nutmeg if desired.
Enjoy

Concierge present …Culinary w/Block 37

Week #8 Block 37 FALL EDITION As we conclude the final week of Block 37 with students @ De La Salle . It was only fitting the finale end with a fine dining experience. Service in a fine dining restaurant is more attentive and formal than your average full-service restaurant, with a slower pace and a more sophisticated ambiance. Leading up to this day students learned proper table etiquette, we discussed navigating through meal courses. Our outing lead us to Grand Street Cafe (Plaza). We were hosted by managing partner & Executive Chef . The journey began with a tour of the restaurant from front to back onto the private dining rooms. Students ordered entrees from a custom menu. Appetizers were welcomed: deviled eggs, mushroom egg rolls, tuna tartare . The assignment was to select something familiar but more so something new. (Our on going rule since day 1 try it before you formulate what you don’t like) Students were able to engage in reflective conversation recapping favorite moments during the culinary program. Conversation included our most attentive servers, and student Chef asking the importance of family and traditions, personal stories love for food. After catering and planning events for my friends, church and kid's extra-curricular activities, I decided to follow my passion that centered around food, fun and family.

Concierge is a full service catering, weddings & event planning and event decor company. From a party of one to an event for one thousand, we offer delicious menu options, surrounded by custom-made beautifully designed décor with a contemporary style of service.

Our approach is simple... we get to know our customer, we design their unforgettable event, we deliver superior customer service from start to finish, and we respect their budget.​
