Week #8 Block 37

As we conclude the final week of Block 37 with students @ De La Salle . It was only fitting the finale end with a fine dining experience. Service in a fine dining restaurant is more attentive and formal than your average full-service restaurant, with a slower pace and a more sophisticated ambiance. Leading up to this day students learned proper table etiquette, we discussed navigating through meal courses.

Our outing began at Piropos a taste of Aregentinia cuisine . We were hosted by the general manager & Executive Chef. The journey began with a tour of the restaurant from front to back onto the private dining rooms. Students started with appetizers.:
calamari, chicken and beef empanadas,Basket of Bread w/Three Argentinean Sauces, Bacon Wrapped Shrimp with Chipotle Aioli , Brie En Croute Served w/ Apricot Aji Molido Preserves & Honey Balsamic Reduction

Grilled Farmland Pork Chops
w/ Roasted Garlic Mashed Potatoes, Sautéed Apples, Walnuts, Raisins and Mushrooms

Grilled Chicken Oregano Breast w/Oregano, Aji Molido & Lemon Butter Sauce, Mashed Potatoes & Roasted Red Pepper

Pan-Seared Salmon w/Sun-Dried Tomatoes or Dijon Aioli Mashed Potatoes & Grilled Asparagus

Linguine Carbonara w/Peas & Pancetta in a Roasted Garlic Cream Sauce

Dessert
Torta de Banana
Piropos Signature Banana Cake Layered with Whipped Cream Cheese Frosting Served with Creme Anglaise & Raspberry Sauce

Torte de Chocolate
Dark Chocolate Mousse Cake with Creme Anglaise & Dulce de Leche

Creme Brulee
Creme Brulee set a-flame table side

The assignment was to select something familiar but more so something new. (Our on going rule since day 1 try it before you formulate what you don’t like)

Students were able to engage in reflective conversation recapping favorite moments during the culinary program. Conversation included our most attentive servers, and student Chef asking the importance of family and traditions, personal stories love for food. Thank you for the opportunity to visit and taking time out of your schedule to make this a memorable experience💜

BLOCK 37 (Fall edition)

Just in time for the holidays students learned the art of homemade cinnamon rolls and rolls . Chef Mike Taylor owner of “All In The Dough KC” gave his testimony how this business has been a blessing, encouraging students to never give up, and always pursue secondary income. Chef Mike walked students through the 7 stages of bread making.

Mixing
The dry ingredients are blended

Bulk fermentation
The importance for dough to rest and ferment after mixing and kneading.

Shaping
The risen dough is shaped into the desired form, Chef Mike even showed variations for bread.

Proofing
The yeast ferments the dough and releases gas, which expands the dough and gives it the perfect shape

Baking
The final step in the process, where the bread changes.

Cooling
The baked good is allowed to cool before we taste test.

Benching
Chef Mike spoke about the importance of allowing the dough to rest, this stage relaxes the dough so it can stretch more during baking.

There is a science to baking, timing is everything.Thank you Chef Mike for your time and talent!

Students fried cabbage, kielbasa sausage, sweet potato cornbread .Students shopped, and budget all menus requested. Total cost for family of 4 less than $15 .

Students did a great job, the kitchen and school filtered the school with the most fragrant aroma .

After catering and planning events for my friends, church and kid's extra-curricular activities, I decided to follow my passion that centered around food, fun and family.

Concierge is a full service catering, weddings & event planning and event decor company. From a party of one to an event for one thousand, we offer delicious menu options, surrounded by custom-made beautifully designed décor with a contemporary style of service.

Our approach is simple... we get to know our customer, we design their unforgettable event, we deliver superior customer service from start to finish, and we respect their budget.​
