Let’s see if I can recall the ingredients and steps…
Medium spicy ground pork sausage
Jumbo onion
Garlic cloves
Red and yellow bell peppers
Huge bowl full of mini bok choy and cabbage
Potatoes
Carrots
Low sodium V8
Chicken broth low sodium
Big can fire roasted tomatoes
Salt
Pepper
Fresh Thyme, tarragon, Marjoram, scallions
Celery
Cuban oregano, basil, rosemary, Greek oregano
Bay leaf
First brown sausage and remove from pot. Add the potatoes, carrots, onions, peppers, seasonings, and sauté a few minutes. Add the herbs, celery, tomatoes, broth, and V8. Cook until potatoes are near tender. Add bok choy, cabbage, garlic , scallions, and cook a few minutes. Simmer. Stir in sausage or your choice of protein. Use your favorite herbs. I luv flavor. Spice it up with some red pepper flakes or a spicy pepper. Salt and pepper to taste. Enjoy !!
