I bought a couple of pounds of shrimp at the Market Fishery earlier. And this dude bought about 10 pounds of lobster claws and some lobster meat. And I can't stop thinking about making some Lobster Rolls.

When I sous vide oxtails, I roast @ 350 for an hour. You get great color, some caramelization and you can render some fat. I poured off 2/3 of a cup. Whew!
