figs are not only delicious but also packed with nutritional benefits, whether you enjoy them fresh or dried! 🤩

they’re rich in fiber, vitamins, and antioxidants, making them a healthy choice for any snack or meal 👌🏻but a quick tip—figs are a bit delicate 🫣, so it’s best to buy them a day or two before you plan to eat them to avoid food waste. look for figs that are plump and tender, not mushy, and keep them in the fridge, covered, to maintain their freshness.

for the ancient greeks, figs were one of the sacred foods associated with fertility and love 👩‍❤️‍👨 ohh yeah! 😋beyond their history, figs are fantastic for digestion, help decrease constipation (thanks to being a fantastic source of prebiotics), and can help in managing blood fat and blood sugar levels.

here’re your next pantry hacks:

☀️maximize vertical space: use stackable shelves or risers to maximize vertical space in your pantry. this allows you to see and access items stored on higher shelves more easily.

☀️ rotate stock: practice the “first in, first out” rule by rotating older items to the front and placing newer purchases behind them. this helps prevent food waste by ensuring older items get used before they expire.

☀️ here’s a nice tip: whenever you transfer food to containers, add the expiry or best-by date on a piece of tape (remember that these two are different!!!) and stick it on the container. this helps me keep track and use the contents in time avoiding food waste!

☀️ when the container is getting low, let it empty completely before refilling it. never add new food on top of the old. my recommendation: finish what’s in the container, wipe it clean (very important!), and then refill it with fresh product to ensure you’re always restocking with the freshest food.

many vanilla products like🍦and 🍪 likely use imitation by just saying “natural flavours” on the ingredient list. the real one will list “vanilla bean extractives.” also, take a look and a whiff👃🏻– the real one has a stronger smell due to the alcohol and is much cloudier than the fake one.

💡real vs fake vanilla:

did you know that only 1% of vanilla products worldwide are genuine? 😲 most authentic vanilla originates from Madagascar. producing real vanilla is laborious and expensive. in the US, numerous brands sell imitation versions crafted using lab-made vanilla, derived from petroleum or compounds found in clove oil, wood, and bark 😓. these are permissible as long as “artificial flavoring” is disclosed on the packaging 😦. in Mexico, some items labeled as “vainilla” were created from tonka tree beans, which contain a toxic substance called coumarin, banned in the US 🚫

😃identifying real vanilla:

👉🏻examine the ingredient list: authentic vanilla will list “vanilla bean extractives.”
👉🏻assess its appearance and scent: real vanilla boasts a more robust aroma due to the alcohol and appears cloudier than its counterfeit counterpart.

✨organize items in your pantry by placing similar food groups together (such as grains and pastas, baking supplies, legumes, spices and herbs, etc.). this way, you'll know exactly where to find each food category. storing your food in containers keeps them fresh longer and allows you to see the contents at a glance, making it easier to know when to restock! 🥜🫘

✨now, let’s label everything! labeling containers with the food name is key so you can differentiate between flours, whole grains, legumes, nuts, seeds, etc. otherwise, you may forget what's in each container in the future, and you don’t want that!

here are some tips to help you cut it down:
💦stay hydrated & rested: cravings often come from thirst or fatigue.
🍓choose naturally sweet foods: berries, apples, grapes, sweet potatoes, and bell peppers are great options.
🫚spice it up: use cinnamon, nutmeg, and ginger to enhance flavor and balance blood sugar levels.
🍌whole sweeteners: opt for dates, bananas, and applesauce in your recipes. the fiber in fruits helps moderate sugar release.

natural sweeteners to enjoy (in moderation):

🍯 raw honey: packed with enzymes, amino acids, and antioxidants.
🍁 maple syrup: rich in antioxidants and minerals like zinc, calcium, and manganese.
🥥 coconut sugar/syrup: low glycemic index, tapped from coconut palm trees.

here’s how to distinguish the real deal:

✔ look for stencils on the cheese, a mark of authenticity.
✔ notice the buildup of crystals, a sign of amino acids and distinctive flavor.

did you know it takes over 40 gallons of sap to make just one jug of real maple syrup? which is why it can cost around $20 a bottle.

🍁 surprisingly, roughly half of what is labeled as 100% maple syrup is actually not. but we’re lucky to be in Canada, which produces 85% of the world’s real supply of maple syrup.

🍁 the imitation kind is often a mix of corn syrup, high-fructose corn syrup, caramel color, and added flavorings. you can tell it’s not real maple when you see words like “pancake syrup” or “table syrup” on the label.

🍁 the real deal says “100%” or “pure maple syrup” and has just maple syrup on the ingredient list.

‼️beware of illegal maple syrup that claims to be 100% maple syrup but isn’t. real syrup is often thinner than fake, corn-based syrups.

🍁 stores are flooded with imitation syrups that don’t have any maple sap. stick to the real stuff for that true maple flavor experience and reap the nutritional advantages of this natural sweetener! 🥞

both pickling and fermenting are food preservation methods, ideal for using organic vegetables and various spices and herbs for added flavor 🤩

🥒 pickling is a fast method that typically takes hours or days. it involves immersing vegetables in a vinegar solution along with spices and herbs (and sometimes sugar). they are shelf-stable because of the vinegar, but they do not contain the gut-friendly bacteria found in fermented foods.

🌿 fermenting, on the other hand, is a slower process that can take weeks, months, or even years. during fermentation, beneficial bacteria break down the natural carbs and sugars in vegetables to form lactic acid (lacto-fermentation), creating a tangy and complex flavor profile. this lactic acid brine encourages probiotics to thrive, making fermented foods great for digestion and gut health and part of a healthy diet. kimchi and sauerkraut are great examples of this! 😊

so, now is the time for you to check the ingredient list of your pickles and see if vinegar is listed at the top, if so, you’ll know they’re pickled, not fermented.

while pickles offer tanginess and a vinegar kick, fermented foods provide a broader spectrum of flavors and contain living gut microorganisms. both are delicious options, but understanding the difference lets you choose based on your taste and health preferences! ✨

it’s a natural sweetener produced by bees, who collect nectar from flowers and convert it into honey back at the hive 🐝

but honey isn’t just tasty; it’s also packed with health benefits, serving both as food and medicine:

✨antibacterial and antimicrobial properties - thanks to its unique composition, honey can fight off harmful bacteria. applying honey to cuts and burns creates a protective barrier, promoting faster healing and reducing infection risk, thanks to its natural enzymes and moisture-retaining properties.
✨ anti-inflammatory properties - loaded with antioxidants, honey helps reduce inflammation, offering relief for conditions like sore throats, irritated skin, allergies, and asthma (especially if it’s locally sourced!).
✨ rich in minerals and vitamins - honey contains essential minerals like potassium, calcium, magnesium, phosphorus, and zinc, crucial for overall health. It also provides B vitamins for energy and vitamin C, a potent antioxidant that protects cells from damage.

🍯 honey contains enzymes that aid in breaking down amino acids, starches, and sugars.

for best results, I always use honey in COLD preparations to retain its nutrients 🤩 it’s perfect for making salad dressings, dairy-free creams, elixirs, immunity shots, or drizzling over avocado toast topped with feta cheese and red pepper flakes for a nourishing snack (my fave!). do you ever pick restaurants just by looking at their photos? 👀that’s totally me! 🙋🏻‍♀️the pictures of the dishes at this place really got me excited and I couldn’t resist to check it out!

here’s what we ordered at Celele:

☀️we started with a portion of cassava crunch served with sesame butter, followed by a seasonal cured fish dish featuring lacto-fermented long bean chimichurri, earlobe almond hummus, and a local tahini broth.

☀️ we then had a buffalo milk burrata from Planeta Rica Córdoba, accompanied by dehydrated watermelon, hibiscus flower gazpacho, coastal plum leaves, white cucumber, and moringa sorbet. our meal was completed with an arepa Samaria made of pure white corn with ‘costeño’ cheese roasted in biajao leaves, paired with crab from the San Bernardo Archipelago, mashed sweet pepper, foam of butter-basted cooked egg yolks, and egg white pearls (this was my favorite dish 🤩).

what truly stood out to me was their commitment to using locally sourced ingredients, supporting small farmers, and preserving the authentic flavors of the Colombian Caribbean 🌊🇨🇴. it’s inspiring to see businesses like Celele embrace our cultural roots and transform simple ingredients into culinary masterpieces🎖️

this experience was a perfect blend of flavor, aesthetics, and sustainability - a reflection of our values at Anna’s! ☺️

it’s easy to forget how much goes into bringing food to our tables, but taking a moment to slow down and appreciate the natural resources 💦, effort 👩🏻‍🌾, and time ⏰ behind it all makes it so much nourishing and satisfying 💕

I find immense happiness in sharing flavorful and nourishing meals with others, and I’m grateful to the universe for granting me this privilege ✨
