As a private chef and catering company, we are happy to accommodate to fit your dietary restrictions. My name is Carolina Zubiate and I have always had a passion for cooking. Growing up in Lima, Peru, I was lucky enough to enjoy and learn from my grandfather's cooking. One of my first memories in the kitchen was when he let me peel the beans that he had soaked overnight. From that day forward, I w

ould hide under the kitchen table, watching and admiring the way he cooked, waiting patiently for him to realize he was missing something so we could venture to the bodega together. When I was 13 years old, my family moved to the United States. After a few short years, an accident forced my grandfather to move back to Peru. It was an overwhelming feeling, not knowing when I would see him again. I joined a cooking competition through my high school to keep my mind off of him not being around; I quickly realized that cooking was all I ever wanted to do. After graduation, I applied for a job in a hotel and quickly worked my way up to a line cook position. A few years later, I began a job with a new Peruvian restaurant in DC where I picked up several new techniques and gained a better understanding of an open kitchen. I grew such an appreciation for the cleanliness, the attention to detail, and the countless interactions you're able to share with your guests as they watch you prepare their meals. In 2015, I moved to Colorado, and I had trouble finding a job that matched my previous experience in the kitchen. I worked a few front of house positions to remain in the industry and I never lost sight of my dream. Through conversations with close friends, I realized that my dream to be a chef was in my own control. I am proud to be able to share the meals of my country in the comfort of your home. Cooking, to me, has always and will forever be more than just a meal. So let's make memories, learn from each other, and enjoy some good food.

Did you know there are close to 4,000 different types of Peruvian potatoes? They all vary in flavors, textures, colors, and come from unique areas and climates around the country.

This dish is called Papas a la Huancaína. Cooked potatoes topped with a queso fresco and ají Amarillo (Peruvian yellow pepper) sauce. A little garlic, soda crackers, salt, done. So simple and so tasty. My mom LOVES making this dish. Every birthday, get together, or holiday going at the house she immediately knew she was making this dish. “Ay voy a hacer papas a la Huancaína!” I’ve seen her make this dish all my life. So this year, for Friendsgiving, I brought this over to my friend Katie’s house and everyone enjoyed it.

When you need to try recipes- you ask your friends to come over and try it, right?

Solterito is the name of the salad on the left. It has a little bit of everything really. Peppers, Lima beans, tomatoes, onions, limes, corn, aji limo,etc.
I grew up eating this mostly at my grandmother’s house. She had a lady help her with cooking and cleaning and she really became like another grandma to me. Her name was Juanita, and she was one of the best souls I’ve ever met. Every time I’d go over, she’d give me hard caramel candies and make me my favorite foods. Arroz con carne, the main entree dish on the other picture, was another one she could cook so well. It’s a beef shoulder stew with cilantro rice. Typically, they make this dish with chicken, which is also so delicious.

So this one is for you, Juanita. Thank you for all the stories you once shared with me, thank you for your unconditional love, and the endless hard caramel candies you used to give me. I miss you.

Who loves Sundays? Growing up, our whole family would get together at my parents’ house and enjoy each other’s company while enjoying some good food.

This dish, Seco, is a beef stew in a cilantro-aji amarillo sauce. I love making this dish early in the morning, throwing it in the oven, and forgetting about until lunch time. Every time I make Seco, I think about my grandfather and how much he loooves this dish. He and I have zero patience, so I always laugh to myself when I find myself going to check on it before I know it’s ready. He’s always with me, in my heart and in my cooking.

Overwhelmed with all the support we have received in 24hrs! THANK YOU ALL! I would like to share some of the dishes Tupac Amaru Foods would like to share with you and your guests!

This right here is one of my favorite dishes to make; Causa Rellena.

Causa Rellena is a mashed potato layered dish with a filling, which can be anything from shredded chicken, tuna, or a nice mix of veggies. The potato part is mixed with aji amarillo (a peruvian yellow pepper sauce), lime juice, and a touch of oil.

This dish I watched my mom do thousands of times. The only thing she'd let me do when I was little was the mashing of the potatoes while they were suuuper hot. This, I learned is a very important part of the dish! It gives the potatoes a much smoother texture.
