Good afternoon yall 🙂

I made these gluten free and dairy free blueberry pancakes and they are so GOOD so I wanted to share with yall 🥰

This recipie came from the Everything Gluten and Dairy Free Cookbook by Audrey Robert's.

I've found some super yummy recipies in here and have so many more to go.

I gave this pancake recipie a Confections By Lucero makeover lol.

These are great to freeze as well, just wrap tightly individually or 2 max with foil, place in zip lock baggie or other freezable atorage container.

Confections by Lucero Recipie Makeover Tips:

1. Personally, I ONLY use Cup 4 Cup Gluten Free Flour. I find it has the best texture out of all the ones I have tried because you literally can't even tell these are Gluten free, so I highly recommend it🙂. I used to find it at Target but lately I went to my local one and they did not have it, Walmart now carries it!

2. Add 1/2 teaspoon of almond extract , I like McCormick Spice brand

OR add 1/4 - 1/2 teaspoon cinnamon

3. Add 1 tablespoon of sugar

4. Add 1 cup of fresh blueberries ( at the end)

5. I would mix all wet ingredients together, please make sure they are room temperature I would also mix all dry ingredients together , then combine wet and dry ingredients

* NOTE: Your batter will thicken up quickly and this is normal, I use use it within 2 hours, I haven't tried to freeze the batter for later use
