Hey Angels,👼🏾 Chef Celeste here HAPPY NEW YEAR!! 🥳🎆🎊 This is my Blackeye Peas Dip/Casserole it’s a tried and true recipe for a savory satisfying dish to ring in that New Year good fortune.
A few tips 1. You can use any Blackening or Cajun seasoning I use my own mix. A little history when I first started making this recipe I used Chef Paul Prudohmme’s Cajun and Blackening seasoning which has been hard to source where I am. So if you can get your hands on some it will work perfectly for this recipe.
2. I use Jennie-O turkey ham, can’t find it check out your local Mexican grocery store they have a brands called FUD with a low sodium option as well.
Anyway I’m busy with this amazing fusion spread. A blend

Happy Whens-day 👼🏾 ❤️❤️👋🏽👋🏽😫😫🥰😁🤗🤗🤗. Angels, I have some amazing stuff in the works can’t wait to share them. In the meantime. Today is “that time when” Wendnesday. So back in March I participated in the Harry Soo Backyard Barbecue Masterclass. It was so much fun. We cooked so many different dishes I can’t remember how many. At any rate here are a few pic to entice your tastebuds. 1. Me and Harry. 2. The most succulent tasty smoked ribs you ever want to sink your teeth into, off the bone tender. 3. Is a beautifully smoked Pork Butt. I’m totally influenced by this meat. 4. The granddaddy of them all Beef Brisket whew talking about delicious. 5. I’ll let these slices with that deeply imbedded smoke ring speak for itself. Overall it was a great experience. I learned what I didn’t know about smoking meat on the various backyard cooking equipment, building a fire for long term cooks, and a lot more. I hope you all enjoy this post look for more to come. So can we talk about how dang gone good them Shrimp and Grits are looking??? MMMMMMM mmmm. These some big shrimp and not them ill doo-dadds you see in salad. These some BIG shrimp, "SKRIMPZ!”
What you are looking at and drooling over is Grilled Cajun Shrimp and Grits with Tomato Relish. This was an easy dish to create and it was sigh.. so good! I skewered the shrimp, seasoned with my own cajun seasoning and since this is a bbq competition, I put them on the grill. I made the grits extra creamy by cooking them in heavy whipping cream, I sautéed some grape tomatoes, with onion, garlic, and some herbs. Easy, and voila.

Hey Angels, Chef Celeste here on this beautiful Saturday afternoon. Very short and sweet. Feed your eyes on this absolutely amazing Crispy Cod Fish Sandwich, with a side of my French Fries no ketchup needed. This sandwich is dressed sexy with my own homemade tartar sauce, shredded lettuce, pickles and a melted slice of good ole American cheese on a perfectly toasted brioche bun. Mmmmm . 🐟🍟💦 I was inspired theultimateseafoodlover to pull out my and make my beer batter base for this sandwich. The Pabst always makes the lightest crispiest batter, so I really live by it whenever I’m making a beer battered fish. Secret I used tiny a splash of fish sauce to ramp up the umami in this batter and seasoned the fish w just a very light sprinkle of “sazonodor para pescado,” man was that the fish seasoning this fish needed. Grandma Leona

Today is my Grandma Leona’s birthday. Grandma was born in Alabama February 13, 1922. Sometime in the 50’s she relocated to Cincinnati, Ohio with her, then, husband Willie Williams. They, as a couple, purchased a fish batter recipe and embarked on living their best lives by being business owners. I don’t have the exact date but they opened a restaurant named after her on the corner of Armory and John Street in Cincinnati, Ohio. Leona’s Fish Grill, “The Best Fish in Town,” and if you ask people who remember, they will agree. The restaurant was moved to 1418 Linn Street where it remained until it closed in 1980. Leona’s Fish Grill is a legend in Cincinnati. As her granddaughter I am dedicated to keeping her legacy alive. There is a future for Leona’s crispy, battered fish and bagged French Fries. Happy Birthday “Grandmama.” Love “Shelly.”

Hey Angels Chef Celeste here. Today I’m telling a story about my start. I’m posting this pic of my fries as a homage to my Grandma Leona Williams. My Grandparents owned Leona’s Fish Grill in Cincinnati Ohio. That’s where I’m from. I was raised working in my Granny’s restaurant. I started working there after my Grandfather Willie Williams passed away. I was a prep cook. Today being a prep cook is one of my strongest skills. I had to peel and chop 50lb bags of potatoes and clean 50 pounds of fish. I was also allowed to wait on customers. I loved it. I am going to open a restaurant!! You all will get to enjoy all the magic that comes from my ancestry. My Grandma Leona’s everything was the BEST! If you are from Cincinnati and you got the chance to experience Leona’s please comment. I live for the day to bring it all back. I went to Hughes High School and there were some who called me “Greasy Fingers.” I would feel ashamed and embarrassed. I was young. But look at me now. The fries you see in the photos are hand peeled and hand cut and they are seasoned with my version of the Australian Chicken Salt Served in a brown paper bag, just like at Leona’s.
