And before I leave, arranging for all the necessary groceries, ticking all required boxes of medicines, gas, spices, oil, milk, eggs et al and cooking as many dishes as possible so that Maa doesn't need to stress when I am not around. How life changes ! Once what Maa used to do for us when we were kids or even a year back, I am filling in her shoes now. Coming of age has a different meaning today for me.

So the story goes like this : I love the less desired parts of a goat, the offals, the brain, the marrow, the trotter, you name it, I will eat it. And this love was born and raised during my years in Mumbai. The city adores all the parts of a goat and celebrates cooking the same in delicious different ways.

The weather was just great today to do a trial of Goat Brain aka Bheja Paturi. Maharashtrian spice blends and Bengali cooking technique of pan grilling in Banana Leaf. NO SHORSHE influence.

Drizzled some melted butter on top, squeezed some lime juice and devoured this with home made Petai Porota. Spicy sinfulness !

It's a freaking bomb ! Great as Chakhna as well. Wish more Bangalis were flexible enough to enjoy offals !!

At times there's bliss in simplicity and ease. Especially on days when one still feels weak post viral fever. Easy break...

At times there's bliss in simplicity and ease. Especially on days when one still feels weak post viral fever. Easy breakfast. Narkol Chhana Muri and Sugar because there was no brown batasha at home. Usually we use brown batasha instead of crystal sugar.
Not a person with a sweet tooth hence might try this next time in a savoury version with chillies, tomato, dhonepata, aamchur and rocksalt

Pujo '24 was full of gloom and sadness at the disruptive situation, humans going inhuman and political corruption at all levels be it Gaza, Bengal or India at large. Did not have the mindset for celebration and neither did I miss celebrating the recent festivities. Did not visit a single pandal, did not offer Anjali, did not buy anything new, did not even go out with my family and did everything with a prayer.

Worked and worked and worked, from bajar to back home and kitchen, sleeping hardly for 3 hours a day. Why ? Because work heals me, cures me, saves me and gives me the biggest satisfaction and happiness. My work is my prayer to the Almighty, the Mother, the Goddess. I pray and I pray through my work with all the love that I have. I did have a ball of a time this Pujo, my way !

I don't know whether this Bijoya is Shubho or not, we can only hope as mere mortals. May we all rise from the surrounding darkness around us.

Some of the dishes which I cooked over the last few weeks :
Paan Patae Chhana Narkol Aamshotto Khejur Niramish Paturi

Begun Murgi Khagina (traditionally done with begun and dim but me being me, I have to give my own twist to the tale. Few months back had made Ichor Hansher Dim er Khagina, Beyond Borders platter with Subhojit. Thankfully both the versions were a hit)

Smoked Chitol Muithya on pureed Haak aka Shaak (I used spinach, inspired from Kashmiri cuisine & the photo looks super imposed but it is not)
