Charred Tomato & Red Wine Vinaigrette, slowly braised Pork Chop, served with charred seasonal big fat chillies to provide some heat and complexity in flavours. Flavours ? Quick fix noodle bowl with leftover boiled pork, borboti, bone broth, mint leaves and home made fermented chilli sauce yummm. Though anyday I would have preferred thick noodles !

During my last month's visit to Bhopal for The Locavore and the Millet Revival Project's Potluck and Culinary Workshop, one fine evening during our food walk, had enjoyed a bowl of piping hot, other 4 legged bigger sized animal's Paya Shorba. I was intrigued with the idea of including the pulled meat in paya. Trotter was not present in the one I was inspired from. In my version, I added the pig trotter along with the pulled pork and slightly thickened, (a light body to the soup) with Jowar or Sorghum Millet flour. Today's shorba was light and subtle yet meaty, a remembrance of my trip !

P.S. one of the dishes for which Bhopal's culinary repertoire is known as, is for it's Paya Shorba. Happy to have recreated and modified in my own way !

Ode to Bhopal pop out was postponed to today by a week. The dish I am really proud of making today was Open Bao stuffed with lettuce, Jeeravan Masala Marinated Bhetki aka Barramundi fillet, Tamarind and Green Chutney. It was an Open Bao Fish Chaat inspired from Bhopal's love for Chaat and Jeeravan Masala. Thank you for the Jeeravan Masala gift. Much love always 💛

It wasn't easy to knead the bao dough for 46 baos . Took a lot of effort and strength and my wrist and arms are aching already. This is the second time I had made baos. Lots of space for improvement and am super eager for the same.

Cooked after a hiatus for a house party. The request by patron was for flavours yet untapped for pork, chicken and fish.

Hence Caribbean mixed green herbs marinated grilled Pork Ribs, Chicken Drumsticks and Bhetki aka Barramundi paturi served with Fresh Orange Chilli Vinaigrette. All the 3 versions to be dipped in vinaigrette and savoured either as appetizer or as a side to bread or butter rice or a salad and mash. Patron served each as an appetizer to his guests with respective food preferences.

I have a horrendous memory when it comes to remembering and following up of dates of importance like birthdays et al, whilst have a hyperactive intuitively tuned physical system which just acts or reacts for no good reason and then way later in the night I remember WHY !! Have been feeling super low since morning with aching muscles and creaking skeleton bones and a vacuum sealed heart begging me to avoid people today !
Today was such a day which somehow made me crawl out of bed and push me into the kitchen to cook as least as possible yet something that I love. I love a good rajma. Not every rajma dish pleases me being brought up next to a Punjabi family for a few years of my life. Picky me ! A simple salad thrown in, lunch was sorted.
God had a different plan for the evening that's a different story altogether. The I NEED A NO PEOPLE day turned to RAINING MEN HALLELUJAH in the strangest of ways ! Thankfully day is sorted now and so is my night. Wish had some rum in stock !
