Delicious nourishing food makes a difference in our lives. This is a favorite gluten-free bow tie pasta with lemon cheese sauce made with our home made chicken stock base and garnished with a sprig of variegated lemon thyme from our greenstalk.

It’s been a meal we’ve fixed for birthdays, for family dinners, when we need easy comfort food. The cheesy sauce adds warmth while the lemon uplifts it.

If we had lemons, we might be making it today. There is much that has been heavy lately and there is unexpected grief. Yet, there is also comfort and joy right there in middle of it all. Spring is coming.

Gardens will bloom again. The crocus and daffodils are already poking up their heads. The frogs are giving us an all day concert in the creek outside our windows.

There are mercies new each day.

A secret to event planning?

Stellar scheduling.

Getting the details on the calendars and in the schedules can be (note: *can be*) the difference between an event that leaves everyone asking for another get together SOON or one that falls flat. Womp, womp.

Including all the parts of planning, preparation, the event itself, and wrap up in your schedule is a game changer. We know from experience that scheduling individual steps provides a clearer understanding of how much time each part will take, which means you can ditch the stress that comes from not allowing yourself enough time to prepare. 😅

Some parts of scheduling may be easier than others. Perhaps it’s easier to add in an extra shopping trip than to estimate how much time set up will take. What do you find to be the hardest part of an event to schedule?

This flavorful bunless burger was a hit on our recent planning retreat. There are several options for a gluten-free cheeseburger and there were so many toppings that it was quite a mouthful without the bread. Avocado adds a nice balance of creaminess to the tang of onions and mustard. Add an over-medium egg and tomato plus any additional toppings you like for a well-rounded burger.

I was reading through some notes of what I have learned about hospitality during a very intense season where life has been turned upside down. Some of what I have learned has been from friends. Friends who have hosted us for game nights when we weren’t able to, friends who have opened their home to us in other ways and given us a glimpse into their lives that was deeper than we had experienced.
