Courgette Beef Canelones

I learned a great Catalan food, Canelones, in pasta class and twisted substituting courgette for pasta my own way.
I think it (hopefully!😉) worked!
Don’t forget removing excess water from courgette before rolling in the cooked fillings!

カネロネというパスタを使ったスペイン料理を習ったので家で再現。
勝手にパスタの替わりにズッキーニで牛肉と野菜の炒めをロールイン！

Pork gyoza & Granny’s Pickled Plums (Umeboshi)

My homemade Gyoza is super simple but is one of the top five fingers of my daily meal. Always all are gone instantly despite I wrap hundreds of them😂
Last month, when I came back to Japan, my mother-in-low generously let me bring back her homemade Umeboshi to Barcelona because she knows how much the boys love her taste!

This is another very popular style for tasting Tonkotsu Ramen particularly around Tokyo.
I boiled my homemade Tonkotsu soup until it is really thick and creamy because it is a dipping soup.

Yakitori Night -Pine Ponzu & Tsukune (Chicken Meatball) Hotdog

In many cases, usually cooking BBQ would be a joyful work for men, but in my case, that’s my pleasant job as I love to work with Shichirin (Hibachi)!

This time, I marinated chicken with Ponzu and pineapple for one hour in advance.
It was a huge hit for such a juicy and tender chicken Yakitori. Should try it!

焼き鳥ナイト！
ポン酢とパイナップルに漬け込んだ鶏肉を串に刺して焼くだけ。むっちゃ柔らかく美味しい焼き鳥になりますよ。

Homemade Tonkotsu Ramen (pork soup Ramen)

It takes long time (4days) but I have to admit that homemade Tonkotsu soup is the best, truly.
Usually I don’t let the boys drink all soup in a shop, but mine is clear and nutritious for the ingredients, so I don’t mind!

Teba-Age (deep-fried chicken wings) -Crispy Curry & Jjuicy Teriyaki

Another Izakaya time!
That was sort of Kara-age but normally we cook chicken thigh or breast for Kara-age in Japan.
Teba literally means chicken wing and age does deep-fry, and it originated from Nagoya region that is middle area in the main land.
(That was my dad’s home ground!)
So, locals don’t call ‘Teba-Age’ Kara-age.

Also, we have two ways for batter: only plain flour for crispy texture and flour and egg is for fluffy juicy crust.

We made both!

Homemade Bacon Okonomiyaki (Japanese savoury pancake)

We have two major types of Okonomiyaki in Japan -Osaka style and Hiroshima style

Osaka style consists of more vegetables and fillings than Hiroshima, and most definitely Hiroshima style contains egg noodles at the bottom.

When I was a young child, my family lived near Osaka area for 3 years and most weekend, we cooked Okonomiyaki for our family dinner. So this comfort food connects to my root!
