I have been having so much fun making smashed Brussels sprouts for my clients. Most recipes suggest pressing with a glass. I highly recommended smashing them. More marinade, more fun and a nobody knows the difference. Especially when you make them garlic and parmesan. Roast on 425. Enjoy!!
It may be a warm October, but this is a loving reminder to go visit the Rose Gardens. They are still blooming!
This afternoon I stopped at the Allentown Rose Garden before visiting my grandmother. (The most beautiful rose) I visited each variety, soaking up all of this beauty for the cold days ahead. The fragrance is intoxicating. Chefs need time in nature, too!

My heart is so full. Today I attended a beautiful retreat with @brownskinplantmama called the Literary Liberations Author Wellness Retreat. Veronica H. Moore, a talented local author, is the owner of Leaf & Vine Books, LLC, as well as a plant magician and speaker plus the co-owner of @thetastesmokers in Southside Bethlehem. She is a powerhouse and it was such a gift to be a part of this incredible event.
Held at the @theharmonymountainhouse we experienced gentle yoga, a scrumptious plant based meal prepared by our amazing hostesses.
We enjoyed meditation and intentional activities led by the lovely Victoria @v_coop Check out her page. She is a therapist and business coach. Loved her energy.

The Main Course was inspired by my hero, Karen, from the Ferndale Inn in Revere, Pa.
Hunter’s Pork. Freshly made Spaetzle, Pork Schnitzel topped with Ham and Mushrooms sourced from @primordiafarm served with Balsamic Brussels Sprouts tossed with Bacon from Clover Farms, plus Roasted Carrots.
For dessert, she requested Berry Crumble with vanilla ice cream.

Don’t get me wrong. I love my human clients.
But their dogs keep me company all day. Honestly, I don’t know who is happier to see me: the dogs or my clients. It’s the greeting and the tail wagging…and then they roll over with full trust for belly rubs.
At the end of the day, Walle, our cat, has my full attention. Little does he know that I spend my days with the best dogs. And their humans are pretty amazing, too!

Last night, I came home after a long day to a Roasted Chicken dinner. My husband is an excellent cook. Of course!
Today I turned the leftovers into a Coconut Curry Stew. With @jennyskuali Ginger Garlic Sauce. The best!! And every ginger product we had in the house. Plus, organic creamed coconut. It’s soup season. Bring it on!
