If your garden is overflowing with green zucchini, here is a deliciously different recipe from the Columbia Gorge Hotel in Hood River, Oregon. It's been in my recipe file for over 30 years and a family favorite.

***Note the recipe calls for shiitake mushrooms...available at specialty food stores! Most people can now can find them in their neighborhood grocery stores.

If you don't have goat cheese, use torn pieces of fresh mozzarella...just as good.

🥥 Tito's Blueberry Coconut Mojito 🥥

Looking to add a tropical twist to your Fourth of July celebrations in a unique way? Enter the Tito's Blueberry Coconut Mojito a refreshing spin on the classic mojito. This cocktail harmonizes the sweetness of blueberries with the creamy allure of coconut and the invigorating kick of fresh mint. It's a perfect libation to make your holiday gathering even more memorable!

Ingredients:

2 ounces Tito's Handmade Vodka
1/4 cup fresh blueberries
8 fresh mint leaves
1 ounce coconut cream
1 ounce fresh lime juice
1/2 ounce simple syrup (sugar mixed with equal parts hot water)
Ice cubes
Club soda
Blueberries and mint sprigs for garnish

Instructions:

Prepare the Simple Syrup: Mix equal parts sugar and hot water until the sugar is dissolved. Let it cool.
Muddle the Blueberries and Mint: In a cocktail shaker, muddle the fresh blueberries and mint leaves to release their flavors.
Mix the Cocktail: Add Tito's Handmade Vodka, coconut cream, fresh lime juice, simple syrup, and a few ice cubes to the shaker. Shake well to combine.
Strain and Serve: Strain the mixture into a glass filled with ice cubes. Top with club soda and gently stir.

While grocery shopping this past week, I fortunately found a small container of fresh morel mushrooms at a local store.

I decided to treat myself to an indulgent meal using just a few impeccable ingredients. I had a bit of sliced chicken breast for some protein, but really the morels in cream sauce is perfection on it's own.

I do love a strawberry rhubarb crisp, but I think my favorite is a peach and blueberry combo.

Another fabulous rhubarb recipe shared from a chef friend:

Creamy Rhubarb Cheesecake Bars with Crumble Topping
Ingredients:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
2 cups rhubarb, chopped
1 cup whipped cream
1/2 cup white chocolate chips
1/2 cup crumble topping
Directions:

Preheat the oven to 350°F (175°C).
In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter. Press mixture into the bottom of a 9x9 inch baking dish to form the crust.
Bake the crust for 10 minutes, then let it cool completely.
In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
Gently fold in the chopped rhubarb and whipped cream until well combined.
Spread the cream cheese mixture over the cooled crust.
Sprinkle the white chocolate chips and crumble topping evenly over the cheesecake layer.
Refrigerate for at least 4 hours or until set.
Cut into bars and serve chilled.
Prep Time: 20 minutes | Cooking Time: 10 minutes | Total Time: 30 minutes + chilling time

Kcal: 350 kcal | Servings: 12 servings

Making herb vinegars is as easy as washing your herbs and placing them in your chosen vinegar. For a more pronounced flavor use white or cider vinegar; for a milder flavor use white champagne.

2 sprigs fresh mint, divided
1/2 ounce (1T) elderflower cordial or syrup, or to taste
4 ounces (8T) chilled prosecco or other dry sparkling wine
2 ounces (4T) chilled club soda, seltzer, or sparkling water
Ice
1 lime wheel

Bright, bubbly, and refreshing.

1 C Greek yogurt… I used plain full fat
1/2 tsp kosher salt

Combine well. Add to a board and need gently for about 30 seconds. Use more flour if the dough sticks.
Follow the rest of the instructions.
I used a flat cast-iron pan with a bit of butter and cooked as directed.
Last one I added a teaspoon of chili crisp and I think that’s going to be my favorite.

Oh the joys of late spring foods.
Among the ones I love the most is a remembrance of my mom's strawberry-rhubarb pie. My rhubarb plant is coming along nicely and while strawberries won't show up until June, I recently bought some very fragrant ones at the store. Served with a scoop of vanilla ice cream or a dab of whipping cream.

NOTE: Always smell your strawberries. No smell? Don't buy.

A rustic fruit tart recipe that features the best of the season. Juicy, sweet strawberries and tangy rhubarb come together in this luscious dessert. Serve with a scoop of vanilla ice cream for an extra treat!

I love Asian dumplings and once the pork mixture in made
(Hint: make it into large meatballs and freeze for future tacos)
