Last week brought another private booking. This time for a large party and a fantastic hen do! 👰 The menu was a simple Mediterranean theme, full of bright colours and even bolder flavours. 🎨😋 Not only that but there were a plethora of dietary requirements in this booking, along with requests for some chocolatey desserts! 🍫 All aspirations and requirements were met, a smooth ex*****on followed, and a 5* review was the result. Thank you 👌

Another successful private chef job! Fantastic local produce, excellent atmosphere, very happy clients. 👌

Menu this week involved;

Rosemary, Sea salt and olive focaccia, whipped butter. 🍞

Ham hock terrine, homemade piccalilli, brioche toast. 🐷
Sesame glazed salmon, Asian salad, soy and honey dressing. 🐟

Rack of lamb, spring vegetable tagine, pomegranate and mint salsa. 🥩
Pan fried Seabass, ratatouille, jersey royals, vanilla cream. 🐟

Chocolate croissant bread and butter pub, vanilla ice cream. 🥐
Blueberry marscapone filled profiteroles, white chocolate. 🫐

Safe to say all the above went down well. In true Joe fashion I didn't manage to snap everything 📷 but I think I did better than usual 😅

⭐ PRIVATE DINNER MENUS ⭐

Below you will find some sample private dinner menus for 2025, each depicting a different season and the kinds of ingredients you'd find at the time. ❄️🌞🌱🍂

As stated these menus are running at a flat £60 per head (minimum of 6 adults per booking). They all include bread for the table, laying of the table, cooking, serving, cleaning and leaving the place as we found it. Allowing you to relax and mingle with your friends and family in your own home or holiday let. 👨‍🍳😎

This is perfect for all events whether it's a birthday, anniversary, hen/stag do etc. 🥳
The menus don't need to be fixed. I have a bespoke menu service which means we shall discuss over the phone all your likes and dislikes and I can create a menu tailored to you and your guests. This starts from £60 per head and will change depending on ingredients and/or how many courses. 📞📝

Lastly I have attached a Canape menu. Whether you want to add this to your private dinner or need a large party catered for, this is a perfect little sample menus to get started with! 🍾

Something my younger self would not have predicted... Donning a suit instead of the whites! Why you ask? 👨‍🍳➡️👨‍💼

A couple weeks back I had the pleasure of consulting for a fantastic trust of schools based in the South West. I spent a few days seeing all of their kitchens, speaking to their catering staff and head teachers, and generally documenting everything I saw and heard. 🏫🚸

I followed this up with a lengthy report. Breaking down each individual school kitchen and how they could be improved, streamlined, money saved and of course increasing the well being of the students and staff. 📄

This was a fantastic new challenge for myself and it's safe to say that not only did I really enjoy it, but my feedback and findings were well appreciated! 🤝
What amazing schools, staff and pupils I got to meet! ♥️

Phew it's been a hectic few weeks as of recent, and refreshing seeing some aspects of the industry doing well, despite the time of year and economic troubles. 😁

Just like that my Mojo's back! I have a new job as the Head chef at the , with my own, brand new menu, showcasing some delicious small plates and pizzas! 🍕🥘👨‍🍳

I've been really getting into Indian cuisine lately and may have filled another cupboard at home with various exotic ingredients, much to my wife's amusement! However, it inspired this new dish that I adapted from the cookbook. A lentil dahl, packed with spices, fresh ginger and seasonal English rhubarb! This really helps to balance the spicy sweet and sour notes. 🌶️🫚🪴
