Here's the newest addition to my summer menu!
with fresh tomato, onion, pine nuts and raisins with fried eggplant, pecorino and lots of fresh mint and basil. Super tasty!

A simple bowl of frittura, fried fish the Italian way. You can taste the sea!
Some will argue it's a sin to add a splash of lemon juice because it will hide the delicate flavor of the fresh seafood but I love it and I am not ashamed of it.

Bucatini con lo stocco - today I bring you to Calabria!

"Stocco, a kind of dried cod (it takes five kilograms of fresh cod to produce one kilogram of stocco), is a dish whose origins are lost in the mists of time; considered a poor man's dish, it was prepared and eaten by farmers and labourers, very high in protein (low in fat, also rich in vitamins and minerals), in fact, it provided the energy needed to tackle the hard work in the fields."

My father used to cook it super super spicy, with olives, origano and tomato. To me, for this dish, it's fundamental to use the Terracotta clay pot for an excellent result.

A classic dish for every Italian summer, the trick is to obtain a creamy sauce using some starchy pasta water and a good olive oil. Be generous with the clams and don't over cook them!
