Why is this Grilled Shrimp & Avocado Salad a summer hit? It’s fresh, flavour-packed, and ready in under 30 minutes - perfect for busy weeknights or your next backyard BBQ.
Here’s how to make it (serves 4):

👉 Shrimp Marinade:
• 2 tbsp olive oil
• 2 cloves garlic, minced
• ½ tsp kosher salt
• ½ tsp cracked black pepper
• 1½ lbs deveined shrimp (20–30 count)
Mix all together and marinate for 30 mins.

👉 Salad:
• 2 diced avocados
• 1 red pepper (thin strips)
• 1 cup cherry tomatoes (yellow & red)
• 1 chopped green onion
• ¼ cup chopped cilantro
• ¼ cup olive oil
• 2 tbsp lime juice
• Salt & pepper to taste
Toss all ingredients together.

👉 Grill shrimp for 1–2 minutes per side on high heat. Serve with the avocado salad.

Light, satisfying, and bursting with zesty flavour - this one’s a keeper.
