Just as an update on my crazy life circumstances I wanted to make a statement.

I have had to take on a job in addition to inheriting my mom's part of my initial job I have been working for the last 20+ years. I foresee this summer being crazy busy in both industries for me personally. I work 32 hours a week on my feet at a restaurant and another 20 hours a week in home office work.

I am a hobby baker (I love to decorate, but baking isn't what I am best at) and therefore I never wanted cake decorating to become a full time job. I will be limited on when I can actually have the time to work on a cake. If you need one on a Tuesday, I can probably pull it off, but any other day of the week would be a struggle to accomplish.

I'm working on this cake tonight. I wanted to share the inside. Never had one quite like this. First layer on the bottom is apple cake, then add cooked apple slices and vanilla pastry cream with diced apples cooked like apple pie. Then is yellow cake topped with strawberries in a glaze made out of pureed strawberries and another vanilla pastry cream with strawberry puree, and then a chocolate layer with whipped ganache on top. It needed to be skewered because of all those toppings. Hopefully it won't crush itself.

I deleted the cookie page I had. I had hoped to pick up some work through their site, but without investing in samples to get my name out in the area, it isn't worth the effort.

That being said, I can still fulfill orders for cookies, just with different recipes. My chocolate chip and oatmeal raisin cookies (which can be made into cran/orange) are great recipes and I have tons of cookbooks and magazines for all kinds of cookies. (Plus the internet.)

The royal icing work on sugar cookies is NOT something I am great at, so that kind of decorated cookie isn't likely for me to agree to, but that also depends on the design. You can see where I did attempt here in this pic.
