Carrot and cumin salad with pomegranate and mint.

This is a great vibrant salad to add to your summer spreads with a bbq. Also works really well with spicy food, curry or a Lebanese.

Ingredients for the dressing:
Lemon juice
Ginger
Nigella (onion) seeds
Olive oil

🌱 Seasonal Food Of The Week - Carrots

Early season carrots are harvested from June through to August in the UK. Although, other varieties mean that carrots can be harvested nearly all year round. We love carrots for their colour, shape and texture and the endless options of recipes available from starters to soups and even puddings.

✅ Great source of beta carotene, fibre, vitamin K1, potassium and antioxidants.

🥒Bbq or chargrilled asparagus, courgette, double podded broad beans and spring onions.

🍶 For the dressing I used white balsamic, olive oil, garlic, salt and pepper.

🌶Shavings of parmesan, red chilli or lemon would be nice too and any soft herbs (dill, basil, parsley, coriander, chives - whatever flavour suits).

🌟This salad would work really well with a few of our dishes such as our Wild garlic & basil pesto chicken or Goat’s cheese with aubergine and fennel.

Recently, I have come across an increasing number of articles on processed and ultra-processed foods. They’re finding their way into our cupboards and are having consequences on our health.

It’s so important to us to know where all our ingredients come from (even if sometimes it means picking it ourselves 😆). We don’t include anything artificial or any ingredients that has a name you wouldn’t be able to recognise. Our dishes are made using raw ingredients, from scratch and without any cost-saving bulkers.

The only claim that we make is that we cook real, honest food with top quality ingredients that will leave you satisfied and full on good, healthy food.

Elderflower is finally in bloom in the UK 🌿

So, I managed to pick some to make this weekends creation of elderflower and strawberry Victoria sponge.

Ingredients:
Roasted asparagus
Broad beans (didn’t pod these as they add texture to the dish)
Ham
Boiled egg
Parmesan
Chives
Tossed in olive oil and lemon

1. Get our dish straight out of the freezer.
2. Place it in a preheated oven and cook to instructions and piping hot throughout (around 55mins from frozen at 180C).

🌱 Seasonal Food Of The Week - Broad Beans

June is the best month for broad beans. They are so flavoursome popped straight out of the pod and served as they are or crushed. Broad beans can be picked from late-spring to mid-summer in the UK.

✅ Rich in plant protein, B vitamins and calcium.

-Pork chops with broad bean & minted jersey mash
-Burrata & broad bean bruschetta
-Lamb with smoked aubergine & minty broad beans

Banana and chocolate loaf.

This banana bread recipe is simple to make and absolutely delicious. Top tip is to use really ripe bananas and I also dip them in sugar pre-baking so that they caramelise slightly.

Ingredients:
285g plain flour
1tsp bicarbonate of soda
110g butter
225g caster sugar
2 free-range eggs
4 ripe bananas, 3 mashed 1 caramelise
85ml buttermilk
1tsp vanilla extract
75g 70% cocoa choc chips

Method:
Preheat oven to 180C
Add the flour, bicarbonate of soda and salt in a large mixing bowl
In a separate bowl, cream the butter and sugar together until light and fluffy.
Add the eggs, mashed banana, buttermilk, vanilla extract to the butter and sugar and mix well.
Fold in the flour mixture and chocolate chips.
Grease a loaf tin with some butter and pour the mixture in.
Cut the fourth banana down the middle and dip in sugar before placing on top of the batter.
Cook for about an hour until it is golden brown. Remove from the tin and let it cool on a rack before serving.
