I’m all about seafood recipes for weeknight dinners 🐟💙 It doesn’t feel heavy on our Arizona (still very much summer) days & you can knock a delicious dinner out in about twenty minutes.
For this Brown Butter Thyme Sea Bass with Tomatoes:
- I took a short cut, cross hatched my tomatoes and then used my electric kettle to heat boiling water and pour over top just long enough to have the skin peel easily off. But, you can boil water and use a blanch method too.
- Pat fish dry and season with sea salt sprinkle. For this dish I suggest using a thick filet cut with a nice firm flake like halibut or Chilean sea bass.
- Heat half butter, half olive oil in a skillet over medium heat. Place fish skin side down first (if cut with skin on) and allow to cook about 4 minutes, you can use a spoon to baste the top of the fish. Carefully turn over. Add the fresh thyme and tomatoes at this point and finish for an additional 4 minutes.
- Great served with roasted or grilled vegetables OR to make even easier, throw a handful of spinach or arugula in the pan at the last minute.

I’d rather post pictures and video of food/products/sunsets 😝 over my mug any day of the week, but market research (and paid consultants) show that people kinda want to see your face and get to know the person behind the brand. So...I’m taking any and all suggestions on how to become more comfortable in front of the camera. What works for you? How do you get comfortable being “on”? Because taking shots of vodka at work (or elsewhere) hasn’t proven very effective for me 😉
