Some of you have been asking why you havenât seen the food truck out this year, when Iâll be teaching another BBQ class, or when Iâll be posting a new video. The truth is, some things are more important than BBQ.
As some of you may know, my dad was diagnosed with ALS earlier this year. After months of searching for the cause of his symptoms, I heard the three words I feared most: "You have ALS." The impact this disease has had on himâand those around himâis indescribable. While there isn't anything we can do to slow the disease, we can support the organizations that help people living with ALS.
I'm walking in the Cincinnati Walk ALS because my dad can'tâand I invite you to join Team Bunce and walk Nâ roll with us.
ALS, also known as Lou Gehrig's disease, is a progressive and untreatable illness that gradually robs people of their ability to move, speak, and even breathe. Itâs a terminal condition that causes muscles to weaken and waste away, profoundly affecting every aspect of life. The Walk ALS event raises funds for ALS United Ohio âan organization that provides essential services, equipment, and support to people living with ALS.

BBQ Recommendations needed!
Taking a road trip from Cincinnati to Rapid City, SD via I-74 and I-90 (through Des Moines IA)
I checked out The Dayton Barbecue Company at Hidden Valley Orchards today and it certainly didnât disappoint! My favorites were the Brisket, collard greens, and banana pudding were my favorite but everything was awesome. Be sure to check them out!
We are so ready to begin serving you great bbq!! Soft openings happening on Saturday until the end of the month and then Friday and Saturday all April long! See yâall on the farm!

This little brisket loving Jr. Pitmaster is one cool little girl (even if she did âborrowâ one of my Thermapens for her bath water). I canât wait to see what she cooks up next.

Itâs awesome to see how Hank and his team (Aaron and others) have grown and expanded in the competition BBQ world. I started cooking briskets from them in 2015 and many many Mister Brisket sourced briskets have had their names called since then.
The Ribs, brisket, and pork are all on point today! We are at until we are sold out.
4lb wagyu ribeye and some quality Jane time = an awesome first Fatherâs Day.
I smoked the tomahawk at 200 for about 2.5 hrs until it it 115. Then I cranked up the to 500 and seared both sides until it it 127.

She made moms life a little interesting the last few weeks and decided to come a few weeks early but mom (The Camera Lady) and baby are doing great. I canât wait to see what this awesome little lady accomplishes - if she is half as tough as her mom the world better look out. đȘđ»đ„đ©đŒ
No cooktop, no counter tops - no problem. When the camera lady (and baby mama) wants spaghetti and meatballs but the countertops and cooktop wonât be installed for a few more days the saved the day.
Saturday Brisket đ„
A pitmaster job doesnât stop when the meat leaves the grill - the service is almost as important as the prep and cook. I try to always slice brisket as close to when it will be served as possible but this one was for a friend that wouldnât be serving it for a few hours but needed it sliced ahead of time. So I packed the slices into the pan tight and added all the au jus from the wrap to help prevent it from drying out (this was for sliders so I also cut the slices in half). They kept it covered and held it hot and everyone loved it đ€€
Game day wings!
I pregamed for tonightâs Buckeye game by smoking some wings on my đ€€
Pre-seasoned with some baking powered to get awesome texture on the skin then finished of with a little spray butter and Historic Red for the last 30 minutes.

The where busy today as we celebrated Traeger Day!
I started the day by busting out the cast iron grate on the Ranger and to make brisket hash.
Lunch is was pork belly burnt ends (with Traeger Rub and Historic Red) and smoked wings with Pecanerry rub from and and queso.
For dinner we wrapped things up with competition style ribs and spatchcocked chicken.
You know itâs going to be a good day when you kick off Traeger Day with Brisket hash. đ€€
