This barbecue, with a national surname, carries an intrinsic gastronomic ritual whose roots are buried in the basic need for survival in the midst of the Argentine pampas. Whether with family or friends, Argentine barbecue is a true liturgical act, a moment of connection between people who gather around meat and fire.

The ceremony begins early with a “picada” of cheeses, cold cuts, empanadas, and choripanes – a snacking or aperitif that serves as an interlude accompanied by drinks while the meat is being prepared. Entrails, sirloin heart, or narrow steak are among the best cuts for being tender, juicy, and full of flavor, although there are many more pieces that fit into Argentine barbecue.

Mollejas, chorizo, morcilla, churrasco, tira, vacío, ojo de bife, or solomillo. What is clear is that the meat for preparing the best Argentine barbecue must be of the highest quality, a key reason why Argentine meat is considered among the most valued due to its upbringing in open fields.
