Embracing the Wisdom of Sake: Conversations with Sake Breweries
I never imagined that connecting with a sake brewery would be possible, considering the potential challenges like language barriers, inexperience, age differences, and misaligned business expectations. However, my unwavering dedication to sake made me believe that I could overcome these obstacles.
Despite acknowledging my shortcomings, I was determined to change and grow. I sought after the divine drink, sake, sipping its wisdom and recognizing its origin. I delved into the profound connection between heaven and earth, understanding how they unite at the core of sake's essence. Mother Nature provided an abundant world, allowing us to share this heavenly nectar with others.
In this pursuit, sake's followers were born, entrusted with passing on this wisdom from one generation to the next. While the essence of sake remains the same throughout the ages, each transfer brings about new and evolved expressions. We, as custodians of sake's testament, keep it alive amidst the ever-changing world.
At times, the true significance of this testament may be forgotten. However, it is the sake makers who remind us of its commandments through their craft.
I am honored to follow these commandments and share the sake testament with others. It is my mission to communicate the wisdom bestowed upon me, nurturing the journey of my students while keeping the sacred flame of sake alive.
Reflecting on my conversation with Kawabu Sake Brewery yesterday, I found inspiration in how far I've come on my sake journey. What are the main ingredients of sake?
Rice : is the essence of. the drink itself, it is acknowledged as the main ingredient that makes it different from every other alcoholic beverage around the world.
Yeast is an anaerobic organism that eats glucose as a form of nutrition and excretes alcohol and CO2 in its wake. In the production of Sake which is produced by converting the starch in rice into a form of glucose and then alcohol, it is the yeast that creates aroma and influences the flavour. It’s the timing of its addition — at the end of the process — that gives it such a strong influence over the end flavour.
Water: is the source of where sake can originate from as well as its main purpose is to brew sake
Koji: this the essential element that makes sake possible. Rice as we know has starch. So it needs to change into sugar to allow the yeast eat to make alcohol. Koji is like a rice mould that grows on the steamed rice to change the starch molecules into glucose.
Sake maker is called in Japanese is toji , who is the one in charge in making sure everything goes smoothly with the main go of sake .

Okay's let me make a statement.
If you are searching price, you are not looking for value or quality right?
Ask yourself anywhere you go when you ask for price do you get real value and quality not really right?
Think of yourself when you go to grand hotel vs a local motel? Is the quality the same? is the price the same no right?
So why are people pricing sake first when you want value and quality?
Being a retailer with Sake only personally I never looked at price unless I was subjected to. I believed it was important to make a Sake shine through value and quality. Price is choice , a choice that consumers decides or not its worth, but with that consideration they understand why it is priced that way only then the price of the sake has been given a fair judgement.
Do not compare Australian Vintage Shiraz Cabernet Savignon to a Super premium Junmai Daiginjo less than 30% polishing ratio sake from Japan. They don't compare and nowhere near have the same specifications related to cost of the product.
But I can assure you I have priced my sake according to its value and quality not to mention I have throughly enjoyed each bottle in my range to be able to share my sake discoveries with you.

What my experience and hard work have gifted me is to be able to leverage the Japanese sake industry to the real market. Being at the front of the line from when it is was unknown and the challenges we had to face in the order to get it acknowledged. It can't be trained from a book or from someone who has not suffered the same ordeal in order to achieve the same goal.
I believe I have something to offer within our Sake industry, a gateway to having these issues met and assisting through these troubling times.
Japanese Restaurants; Most common I see, and experience, a menu in which they don't know who they want to target and it's very disorganised. It is disappointing to see a Japanese menu not suited for the restaurant style image and you don't know what to order. Japanee restaurants should have their own unique style not just be the same as everybody else.
Sake list within a Japanese restaurant: I see time and time again what I call a sake duplication list. Where restaurants copy the most popular sake and it has no connection to their dishes.
Worse off the owner, the staff even the chef do not know the sake list and it's just for show.
As a restaurant, everything should provide significance to the restaurant not just have it available.
Sake Match pairing degustations: The thriving Australian market is in high demand of the experiences when it comes to food culture and drinking culture. The Sake culture is thriving its way on the market which is the fruit to gaining more ideal customers.
Japanese waitress: It's obvious to see Japanese waitresses serving in Japanese restaurants why? because cultural understanding makes it easier to describe a Japanese menu, but because of the cultural match they lack the confidence and understanding with foreigners because they are so comfortable with their own. To be able to effectively provide efficient and effective customer service to your local market you need to learn to understand another culture which in return becom

To Warm or Not to Warm That is the Question especially for anybody starting off in the sake world. Where did the idea to warm up sake come from in the first place well the obvious answer is Japan, which started as cultural traditions and customs which then open up to misbeliefs, confusion, cultural differences and fear.
Sake in Japan had pretty only rose to the occasion of for appreciation only over approximately about less 50 years to my knowledge and the time I have been in the familiar with this industry.
Australia is still grasping the idea of Rice fermented alcohol beverage from Japan but in beginning, before starting on the journey I was reluctant to try warm sake let alone allow my customers to appreciate it. Because I will be honest I had the idea that sake drinking warm was a bad thing and definitely, also my local market will never appreciate it.
Why? I heard the noise... the noise that people had experience with hot warm, or sake is warmed if it was bad sake or even cheap sake, or it will give you headaches or get you drunk easily.. sounds painful to hear but that's what was happening so of course, you listen to it you start believing it and sadly you stick to it.
I was thinking this way for good 6 years and was dead strong to believe forever. It's not until a friend of mine asked me out to share an experience on my trip to Japan despite me having limited of time to spare that he said " Sandra I want you to take you this Izakaya for warm sake" you will love it.
Trust me I was a bit sceptical and holding on to my firm belief warm sake will never work for me but I was blown away by the beauty I was stopping myself to discover and you know what I did after that?
I went back to Perth I opened an even for warm sake for customers to experience that beautiful experience.
So that goes to show you even for me I listen to all the wrong things as well and rules even more.

Today I will share with you what I love to hunt for.
If I have a mission I will just go around the world to capture every waterfall I can find and just be present with it.
It is great healing when you need to escape from daily life and absorb something fresh and new and most importantly to reboot.
This lovely scenery was captured in #serpentinefalls which is a 1 hour drive from Perth , the drive was good as if you feeling like you are on road trip.
Put my lovely Denshin Rin Junmai Daiginjo in the shot to symbolise both the nature and the sake.
Water💧 is quite an essential ingredient for sake brewers to make magic.
I often describe sake as I taste as its like a flavour of magic which can people experience something so beautiful in their palette.
It connects us to what makes Japan and what every Prefecture is able to offer.
