We had a couple food trucks at work today, so I had to show em both a lil love. and gonna cause me to have to take a few extra steps today.

Got the Nashville hot catfish and cheesy grits from . The catfish was crispy and tender with the perfect amount of heat. The grits were on point! Well seasoned and cheesy while not being too thin.

Went with the classic and it’s all gouda sliders from . Both patties were expertly seared, having a lil crust on the outside, while perfectly juicy in the middle. The classic was solid, but the It’s All Gouda was was 🔥! That roasted garlic mayo is truly@something special.

The Promenade at the River Walk not only has space for more teams but also has more room for every team.

Three teams have signed up in the past two days.
Gentry Ewing's Burnt Ends and Burn Outs BBQ and Tim Kuykendall's Renegade BBQ are making their first appearance, while Carl Wakefield's Brother-In-Law BBQ team is returning for their fourth time.

We less than three months away from this year’s Flower Mound Smoke & Whiskey Fest!

Team and vendor registration is now open, so hurry up and register before all the spots are filled. We still have plenty of spots available for teams and vendors!

We are also looking for sponsors too, so if you or your company would be interested, shoot me a message and I can get you info on our sponsorship packages.

If sponsorship ain’t your thing, tickets will be on sale September 1st! Just buy beaucoupe (a lot) tickets and bring your friends to sample some whiskey & bbq. Each ticket comes with a token to vote for your favorite people’s choice entry.

This is a family friendly event, and is always a good time with bbq, cold drink, live music, and activities for the kids.

So come compete, sell home woven handy goods, or just show up to sample some of the finest bbq these competitors have to offer and pass a good time with your favorite hotdogs cooks! We hope to see y’all there!

We had the fried brie, boeuf bourguignon, shrimp scampi, and the cheesecake brûlée. They have a great atmosphere, excellent food, and impeccable service! Definitely going on our list for date night dinners.

Crawfish seasoning brined chicken halves.

Brine:
16oz powdered crawfish seasoning
1 big ol orange
4 small lemons
1 bunch of green onion
1 head of garlic
Whole peppercorns
Handful of bay leaves

Add all ingredients to a gallon of water and boil until seasoning is dissolved. Let brine cool to room temperature or add ice to cool it faster and dilute the brine. Once brine is cool and diluted (with added ice/ wayer, you’ll have about two gallons total), pour into a non reactive container (plastic or glass), add meat, and let sit in the fridge overnight.

I removed the chicken from the brine, rinsed, patted dry, and placed back in the fridge on a wire rack to dry out for a few hours. The chicken was seasoned with LPG & SPG Hot and cooked indirect on my kettle with and hickory chunks.

First, ya make a roux.

After moving to north Texas from south Louisiana in 2015, I began to crave food from home. I drove all over the DFW and found a few really great places and a few that were no so great. Unfortunately, the really good ones were too far to drive to on a regular basis. I figured it was time I learned good, authentic Cajun recipes to cook for myself and my family. For the next few days, I camped out in the kitchen with a bag of flour, a jug of oil, a cast iron pot, and Justin Wilson on youtube. It took a while, but I finally made a roux I was happy with! It was time to build my first gumbo. I looked at so many recipes, I confused myself. A few hours after taking bits and pieces from different recipes, I had completed my first ever pot of gumbo!! The pot was way too big for me, my wife, and my son; so I took it over to my aunt and uncle’s house to share with them and my cousins and get some honest feedback. That’s when I knew I was on to something! Not only did everyone enjoy it, I was told that it tasted just like my late grandma, Tillie Naquin Daigle’s gumbo! To me, I could not have received a better compliment, and as they say, “the rest is history”.
