Random non-food post…. If y’all are considering or have considered , go see for a consultation. I would’ve never imagined it would be an option for me. I’m not quite halfway through my treatment and the progress is quite noticeable and beyond impressive. Dr. Sankey and his staff are top notch; they will answer all of your questions and make you feel at ease. I highly recommend them.

The comments are a good reminder that not everyone knows what you know. It’s also a good reminder to ask or do a little research if you have a question about something.

The pot is not rusted. It’s the result of the Maillard reaction from browning seasoned pork in a cast iron pot. Once deglazed, that grismies, fond, grot, grasdoux, or whatever you wanna call it, will create a complex depth of flavor and add a deep rich color to whatever is being cooked.

Finally made it down to . I missed the preorder, so I got there early to stand in line. I’m glad I did! It was definitely work the wait. Beef cheek boudin, brisket, turkey, burnt ends, pork belly, pulled pork, Gouda grits, mac n cheese, and brisket dirty rice…all phenomenal! Don’t let them tell you there ain’t no good bbq in Louisiana, they a damn lie.

Mixed up a batch of andouille as an ingredient for my people’s choice entry at this year’s Flower Mound Smoke & Whiskey Fest! If y’all need something to do on Saturday, come out and a holla at ya boy. There’ll be plenty of options to sample from some very talented bbq teams, as well as whiskey tastings from 11 distilleries, live music, and face painting by art students from our local high schools. Y’all some pass a good time and help support the Summit Club of Flower Mound in our efforts to give back to the community through grants, scholarships, and donations to help fulfill needs in our own community.

First, ya make a roux.

After moving to north Texas from south Louisiana in 2015, I began to crave food from home. I drove all over the DFW and found a few really great places and a few that were no so great. Unfortunately, the really good ones were too far to drive to on a regular basis. I figured it was time I learned good, authentic Cajun recipes to cook for myself and my family. For the next few days, I camped out in the kitchen with a bag of flour, a jug of oil, a cast iron pot, and Justin Wilson on youtube. It took a while, but I finally made a roux I was happy with! It was time to build my first gumbo. I looked at so many recipes, I confused myself. A few hours after taking bits and pieces from different recipes, I had completed my first ever pot of gumbo!! The pot was way too big for me, my wife, and my son; so I took it over to my aunt and uncle’s house to share with them and my cousins and get some honest feedback. That’s when I knew I was on to something! Not only did everyone enjoy it, I was told that it tasted just like my late grandma, Tillie Naquin Daigle’s gumbo! To me, I could not have received a better compliment, and as they say, “the rest is history”.
