Fun fact: if you cure egg yolks in a bed of salt for a few days in the refrigerator, they come out hard and you can grate them. Personally, I love doing this and grading it into warm pasta, or in this case orzo.

You can also grade it onto a salad, inside of a sandwich, or into any soup to make it extra creamy and thick.

Let’s talk about this. A nicely boiled egg, topped with sugar, torched into caramel, then topped with basil salt, microgreens and fig glaze.

As I said to everyone I handed one to this evening “this might be weirdest thing you’ve ever had”

Thank you to everyone who dared to try one of these. This has been one of my favorite catering apps to create and I’m so happy so many people are so daring and tired these!
