Soy butter noodles. A savoury, sweet and comforting dish that takes minutes to make.

Boil either wheat noodles or pasta. Once cooked drain and put back in the pot with a tablespoon each of butter, light soy and sweet soy sauce. A teaspoon of mince garlic and sprinkling of chives. Mix well until butter has melted and emulsified with the soy. Top with a fried egg and chilli oil.

Best overall food, relaxed and friendly service and atmosphere, away from the port next to the church
* Le Bistrot du Marin ro
Super busy, full of locals, and be prepared to use your French skills but fantastic food and atmosphere.
* La Rhétaise
Fresh oysters and seafood, deep in the salt marshes. Wonderful location.
* L’Endroit de Goinfre
Beef specialty restaurant in La Flotte, friendly and delicious meats.
* Le Tout du Cru
Cosy seafood bistrot behind the port in St Martin, wide range of seafood platters and lovely staff.
* La Cabane Oceane : Nº9 Le Bar à Huîtres et La Boutique
Out on the oyster culture coast between St Martin and La Flotte. The best, freshest and cheapest of the trip (€21 for 12 oysters and 2 glasses of wine)
