I actually do use foliage, but I never automatically factor it into a design. In the same way I don't add pink roses to every arrangement, parsley to every recipe or a red scarf to every outfit, sometimes I just don't think it goes. I add it when it really adds something to the arrangement and it complements the colour palette.
I remember buying and receiving flowers before I became a florist and I was often disappointed by the flower to foliage ratio. I always wished I could have swapped the greenery for an extra rose or a tulip or two. So that's how I approach my own designs now. It's very much driven by my own perception of value, style and love of big blooms. It does mean that my bouquets tend to be a bit smaller than average as there's no foliage to bulk them out, but they are full of luxurious flowers, beautiful colours and interesting textures.
