Garlic rosemary roasted tomatoes, trinity sautéed in pancetta grease, breaded and baked eggplant = Eggplant Parmesan. Every plate cleaned.

I marinated overnight in a citrus brine. Then I poached in chicken stock. Coated in buttermilk and breaded with a seasoned egg batter and deep fried. Served with twice baked potato.

Last year my herbs did lousy. Today I just harvested 4 dehydrator trays of chervil. Probably will be all the dried chervil I'll need. Also harvested a handful of parsley. Sage, oregano, thyme and tarragon are taking off.

Tuna Nicoise on Ciabatta from Ciao Italia

Nicoise(olives, capers, anchovies, coppa, salami, prosciutto blend) tuna, boiled eggs, lettuce, Parmigiano regianno and tomato layered on grilled ciabatta bread.
