Today we will discuss Chef Bee’s eggplant stir fry. She uses Japanese eggplant, and cuts 4 “rounds” which are then halved for 8 pieces/dish. This is complemented with onions, bell pepper, Thai basil, and your choice of protein. The eggplant is briefly cooked in the fryer, and then combined with the protein and other vegetables to sear in a very hot wok. It makes a very nice vegetarian or vegan dish when crispy tofu, or only vegetables is chosen for the protein. Certain recent Google reviews have complained that there were only 4 pieces of eggplant, and that there is not enough stir fry to justify the price. However, today’s picture is of the recipe that Chef Bee makes for each order to-go. She has plated it today to give a true representation of the portion size. 🙂. Dig in!

Chef Bee and family have made progress in the dining room! The entry is looking better with some decoration, and Kevin has finished installing “The Beach” on the West wall. The herb garden seating next to the window has been popular. Good morning! Let’s talk about dessert today. It is difficult to find mangos good enough right now, but Chef Bee has three excellent, hand crafted desserts on the menu. Deep fried Thai bananas with vanilla ice cream is new, but one of Kevin’s favorites from Thailand. Strawberries with sweet sticky rice, topped with coconut crème and sesame seeds is a sweet-tart delight. Taro Thai custard is reminiscent of the Mexican dessert, flan. It is served with sweet sticky rice, topped with coconut crème and sesame. The sun is out! And, Chef Bee is experimenting with “plating” using the new dishware candidates for the restaurant. The first recipe is her garlic pepper stir fry with crispy pork and a fried egg. Enough garlic to make your eyes water. The second recipe is traditional basil stir fry (pad gaprow) with chicken and a fried egg. Wow! It’s a cold one today! Chef Bee and family are open and cooking at 418 E Simpson St. in Lafayette. We have nice, warm indoor seating available as we work the the architect on the plans for the indoor kitchen for Chef Bee. In honor of our 5 degrees low temp last night, let’s talk about everybody’s favorite Thai iced drinks! Thai iced tea, iced green tea, and iced coffee are made 2x concentrated so that when the ice melts in tropical heat, the drink dilutes to the correct tea/sugar concentration. However, it often seems to be more popular in freezing weather. Go figure! ;-)

We know you are ALL wondering how all the tropical Thai fruits and vegetables are doing in the greenhouse when it is only 8 degrees this morning? Well, as you can see, the “cool end” is managing to stay at least 35.6 degrees. Banana for scale ;-)

Good morning! Well, we have been practicing with the greenhouse to keep the Thai herbs, fruits, and vegetables happy through a Colorado winter without breaking the bank with heating costs. Last night got down to 19 degrees, but at a cost of about one gallon of waste vegetable oil, our heaters plus grow-lights were able to keep the greenhouse at 47 degrees. That is a 28 degree temperature boost from outside! So this Wednesday when it gets down to 7 at night, we could keep it at least 35 inside. That is a win! We will put a bit of a video update in the comments.

Today let’s talk about Kevin’s favorite stir fry, garlic pepper stir fry! Chef Bee can make it vegan, with crispy tofu. However, Kevin prefers it with either beef or crispy pork belly. Stir fried with broccoli and black pepper, topped with toasted garlic, and served with jasmine rice.
