Pizzagaina is an Italian family tradition in my home, and it's usually made during special occasions and holidays. This year it was perfect for using up the Christmas ham. It's a Breakfast Calzone with ham, salami, pepperoni, mozzarella and hardboiled egg. I especially love this because it's great hot or cold, and it always makes me feel like I'm at Grandma's❤

Sometimes food happens with trial, error, mistakes, fixing mistakes, and learning to do it a better or different way, adapting. A cool thing about Chilli Rellenos is separating the egg yolks from the egg whites, whipping the whites to a stiff peak, then folding the yolk back into the whipped whites! Roasting the pablano while you whip the eggs, then stuff them with cheese. I tried a no fry method, because I'm just not a huge fan of fried foods, and it didn't really bake out well...so the finished product was out of the casserole pan into a nonstick pan. The flavor was still spot on and it tasted like a Chilli Relleno, but next time I will execute it differently. The eggs came out extra fluffy because of this whipping technique, so it was cool to learn a new method!🍳🍳🍴🍴
