I’m glad that May is over…..it stretched me almost to my limit. I’ll be taking intermittent rest days over the next week or so to recover from it all, wherever possible.

Are you wondering where I’ve been? Well, I don’t think you wanna know. All I can say is, I tested my ultimate limit by accepting back to back orders, all while preparing & operating 3 days of a foodstall at the recently concluded Nightcliff Seabreeze Festival and last night’s Deckchair Cinema catering duty!!!!!🤯😱😓
I felt like my hands & legs wanted to fall off after all this. Never again!🤣😂🤣

Based on the various guesses from my previous post, it goes to show how versatile the humble eggplant is.
I made Mousaka!!!!🤩😁
Made on a base of grilled potato & eggplant slices, layered with a juicy beef mince sauce, then topped with a creamy & fluffy bechemel sauce. I could eat this all week without getting tired. 💜🤤🤤🤤🤤🤤

As if I didn’t learn from my previous cake adventure, I accepted another cake challenge🫣. This time I attempted a rustic chocolate cake with chocolate cream sandwiched between 2 layers, for the 60th birthday party.
If you think baking a cake is difficult, try transporting one in this Darwin heat alone🥵, with no formal qualification in cake handling, while driving a manual vehicle. I had to grow a 3rd arm to support the cake, the minute I spotted a berry, from the corner of my eye, rolling down the cake, only 5 minutes into the 18 minute trip.🥴 I could feel my blood pressure & heart rate going through the roof. 🤒
Were all the hours I put into this cake in vain? Will this cake make it to the delivery location? 🤔 These were all the questions running through my mind, as I faithfully protected this cake from every bump on the road. Alas, I made it to my destination & to my surprise, all the remaining berries had survived the trip!💃🏾💃🏾💃🏾💃🏾

Could someone not just hijack it? 🤔 Well, it obviously can’t be tampered with until it gets to it’s destination, that’s why it’s in use.🤣😂🤣

For the longest time, I have been meaning to make small batch, homemade ice cream, with honest ingredients ONLY & no preservatives. 🥟😋 Made these homemade bao buns for the White n Gold Boat Party a couple of weeks ago. These fluffy delights are the epitome of comfort food. Trust me, the taste is out of this world! 🌍🤤 I filled them with pork belly & tofu but didn’t get a pic of the finished product. Each bite was a delightful explosion of flavors and textures.🍽️👩🍳

All about last Saturday’s catering gig in Brisbane, for a gorgeous couple, who hold a very special place in my heart!💕🤩 It was a huge undertaking, but I’m glad the 200+ guests were well fed. 😅 This is the beginning of many more interstate catering gigs…..my calendar is now open for orders.😉
