LEAP Academy’s Be the Light Gala was incredible last night! We were honored to have the opportunity to prepare the food for such a beautiful event ✨🧡 Almost 200 guests enjoyed a formal dinner of juicy grilled chicken, roasted pork loin w/ an apple compote, macaroni & cheese, country style green beans, roasted seasonal fall veggies, mixed greens salad, and rolls. It took a team of 6 to make this all possible safely and on time!

I label myself as a personal chef & caterer because I like to accommodate whatever your needs may be. I like to know your reason for needing a caterer. I’m a little empathetic and without thinking about it I imagine myself being one of the guests, the feelings and conversations being had, etc. When I cook, it truly comes out of a place of love. It may not be the most lavish looking spread but one thing about my services that’s not seen is I PRAY over the food and for the ones I’m serving every time.

ALMOST vegan spaghetti with locally sourced ingredients 🍝🌿🤤 I did use a little🤏🏼 bit of butter when sautéing the veggies and there is a small amount of homemade tomato sauce in the middle 🍅😋 Grateful for our local farmers and friends who love to share produce from their gardens 💚

Summer is in full swing! And kabobs are a great way to utilize unused produce and ugly cuts of meat. This meal was put together with some leftover lemon slices, a few sweet peppers that were starting to wilt, and the leftovers of unused onions. Shout out to our dear friend, Ms. Denise, for sharing some zucchini from her garden! 💚 She grows the BEST! Now to head to our local farmer’s market to stock up on some fresh produce 😋
