When you know a final product such as chocolate and you want to help your "adopted daughter" in her project about sustainable cocoa. What is better than learning the whole Saturday about the cacao process, how to analyse the quality, how to taste, how to detect the rich diversity of cocoa flavours?
Enormous thanks to Daniel from PRIDI Cocoafevier to share with us his knowhow & his experiences. This training was very instructive, despite of some desillusions learning about unknown "practices" in chocolate industry.
We will use this training to teach and help thai cocoa farmers to grow their trees, respecting Mother Nature and following sustainable rules for a better product in order to upgrade the image of Thai cocoa.
I'm definitly conquered by the Premium real chocolate and will use it in my recipes!
