A memorable wedding that we did was last month right on St. Patrick's Day. Of course there was a theme! An Irish menu that included colcannon soup to warm the bones on a chilly evening.
As a bespoke caterer this is what we do, we cater to our clients, tell their story through their menu, and continue that thoughtfulness that has been placed on every detail of a wedding.

Pi Day is this Sunday (3.14)! So we thought we'd share this Vegetable Pie Recipe with you. Vegetables are stewed with a roasted red pepper and tomato sauce, then topped with creamy goat cheese.
CRUST
1 1/2 cups all-purpose flour
1 1/2 teaspoon sugar
1/4 teaspoon kosher salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/4-inch cubes
FILLING
1/2 cup marinara sauce
1/2 cup roasted red peppers
1 medium eggplant, cubed
1 medium zucchini, cubed
1 medium onion, cubed
1 medium bell pepper, cubed
1/4 cup goat cheese
salt and pepper to taste
1 tbsp olive oil
DIRECTIONS
1. Preheat your oven to 375 degrees.
2. Simmer your marinara sauce with roasted red peppers. Taste for seasoning. Pulse your sauce in a blender.
3. Toss your vegetables in olive oil, salt, and pepper. Roast your vegetables on a baking sheet. 10-15 minutes.
4. Pre-bake your crust until golden.
5. Simmer your vegetables in your sauce for 5 minutes.
6. Fill your pie crust. Top with goat cheese. Bake for 5 minutes.
