👩🏾‍🍳Sweet and delightful, this Guava Roscon will transport you to a tropical paradise! Follow these simple directions and enjoy the explosion of flavors.

Ingredients:
🔸2 and ¼ teaspoons yeast
🔸7 oz. plus 4 tablespoons warm water
🔸4 cups all-purpose wheat flour
🔸1 teaspoon salt
🔸½ cup sugar a little more for garnish
🔸½ cup melted unsalted butter
🔸1 tablespoon vanilla extract
🔸2 large eggs at room temperature
🔸1 beaten egg for glaze
🔸2 tablespoons melted butter for frosting
🔸2 cups guava paste cubes

Directions:

🟠Pour 4 tablespoons of hot water into a small bowl. The water should be warm, but not so hot that you can't bear the thought of putting your fingers in it. Add half of the sugar, the yeast and stir until it dissolves. Wait about ten minutes for the yeast to begin to rise.

🥣 In a large bowl add the flour, salt, remaining sugar and the water and yeast mixture, and start mixing. Use your hands for this, as it really gives the perfect feel for the consistency of the dough. Add the butter, vanilla and eggs. Mix well.

🤚 Knead the dough on a clean, dry, flat surface. Sprinkle the work surface with a handful of flour, put the dough on top, and begin to knead. Add bits of flour if necessary to prevent the dough from sticking to your hands, or surface.

⏲️Continue kneading until the dough is ready. This may take 8 to 10 minutes. It will be quite elastic. It should not be too dry, however, it should stretch easily without breaking. Transfer to a lightly oiled bowl and cover with plastic wrap. Let rise in a warm place until doubled in bulk, about 2 hours.

👩🏾‍🍳Place the dough on a lightly floured surface and knead for 30 seconds. Cover with a towel and let rest for 10 minutes. Divide the dough into 2 parts of equal size.
Shape each piece of dough into a thick rope shape. Then, using a rolling pin, roll out each piece of dough into a long rectangle.

🍞🧀 Did you know the history of Pan de bono? This timeless culinary treat has been enjoyed for many years and behind there are 3 main theories that I want to share with you (I am not sure about the veracity of these stories)

❤️The first (and one of the most popular) is one that tells us that this “bread” appeared at the "Hacienda Bono" in the hands of Genoveva, a skilful woman who wanted to enrich the traditional bread by adding more nutritious ingredients and that its popularity was so great that it began to be marketed in the surroundings of the hacienda. As time went by, the name changed from "Pan de la Hacienda Bono" to "Pan de bono". Also, this version is corroborated by the French explorer and botanist Edouard François André in his book "Amérique Équinoxiale" published in 1883.

💛The next theory is one that tells us that this "bread roll" was given in exchange for a ticket or "bonus" to the workers of the sugar cane plantations to serve as a lunch or snack. This is why this food was called "Pan del Bono"

💙The latest theory explains the appearance of the pandebono by the bad pronunciation of an Italian immigrant in Cali. We are told that this baker used to go out to the street to sell everything he baked and to attract customers he used to shout "pan del buono" and when the locals heard this, they decided to call it by its current name Pandebono.
