This week has been a very trying and exhausting week. But it started off strong with this burger I tested for fun. It was a bulgogi burger with kimchi mayo and onion rings with American cheese and arugula on a griddled milk bread bun. Why did things go off the rails so hard though?

In case you missed it is having their resident pass sale through the 28th. Pay for a pass and enter for free the rest of the year! I love that the aquarium is indoors and cool for the warmer months and open past 5/6pm which makes it an option for later afternoon visits. 😂

TLDR: here’s my healthy dinner made under 30 mins. Coconut milk poached salmon with over cooked broccolini and Korean mixed grain rice.

I’ve been trying to eat healthier. Midlife brought with it some health issues that I’m trying to beat. I’m ok…just dealing with the trifecta of high blood pressure, high cholesterol, and diabetes. You know, all the fun stuff. Some of it is genetic, some of it stress, and some of it is diet. I can’t control genetics and, of the other two, diet seems easier to control than stress so I’m going to try and tackle that front first. It does mean a whole load of changes for me as I’m surrounded by delicious pastries all day long but I’m happy to report that I’ve been surprisingly good with my will power. And I’ve lost 10lbs as a by product of eating mindfully, which honestly wasn’t a goal p***e. It’s taken me 43 years to be happy with my body as it is and I’ll continue to be happy with it as long as it’s healthy. But it’s not healthy on the inside. So wish me luck as I try to change the trajectory of my health! I’ll try and post more of my healthy meals on here in case anyone else is going through the same thing and needs some food ideas!

Hi. This is me, Viv. It’s January 2nd, 2023 and boy am I glad 2022 is over. Is it just me or was the energy of last year incredibly draining? Anyway, I’m just here so that I can look back at this post next year and say “Heck yeah! We did it!” I have a lot I’m grateful for but I’m really looking forward to killing 2023. My mantra for this year is- I am worthy, I am loved, and I deserve to attain all my hopes and dreams (imposter syndrome is real folks so just trying to drown those negative thoughts out with high vibration, that’s all). Happy New Year everyone!

You Wanted to Know More

Foodcation Forever started out as a hashtag I used when posting about some of the delicious things I ate while traveling. It slowly then became about anything tasty, no matter where I was enjoying it. And now foodcation is letting me cook for you.

My professional background in cooking includes everything from baking breads and pastries from scratch, cooking at notable restaurants in NYC, Boston, and Atlanta, and running my own pop up sandwich shop, as well as a pop up pretzel stand here in Atlanta. Accolades include cooking at the James Beard House in NYC, winning Best Baked Good in Atlanta Pastry Live, and Best Pie at a local farmers market pie contest (Buttermilk Pie with Peaches and Blackberries).
