History
Goat cheese is an ancient food that originated in the Mediterranean and Middle East, where goats were more common than cows, especially in areas with rough terrain. Humans have been making goat cheese for at least 5,000 BC, and goats were domesticated as early as 8,000 BC for milk production.
Nutrition
Goat cheese is considered one of the healthiest cheeses because it has double the protein and half the fat of some cow’s milk cheeses per ounce. It’s also a good source of vitamins and minerals, and the fatty acids in goat’s milk have antibacterial properties. Goat cheese is easier to digest for people who are lactose intolerant because goat’s milk has less lactose than cow’s milk and its fat molecules are smaller.
Flavor
Goat cheese has a tangy flavor and a unique, goaty aroma because it’s rich in caproic, caprylic, and capric acids, which are medium chain fatty acids. As it ages, goat cheese turns from white to a slightly yellow color.
Texture
Fresh goat cheese has a similar texture to commercial cream cheese made from cow’s milk, but when heated, it softens instead of melting.
Seasonality
Goats only produce milk from March to July, so the best time to eat fresh goat cheese is in the spring, summer, and fall.
