We’re delighted to be returning to The Stowe at Penstowe Manor Kilkhampton tomorrow night (Friday) when they have a live band.

Tomorrow night we’re at Clawford serving from 5.30pm proper grass fed Devon Beef burgers, Cornish pork and apple burgers, sausages and halloumi amongst other things.

Just wanted to mention the lovely Des at R.Perkin Butchers Holsworthy. Working with such a knowledgable and experienced butcher means I can say “Des, I’d like to do some trial recipes, what cut would be best for flavour/texture etc for such and such?” To which there is no hesitation before he replies “for that you’re best to use …..”
So we have some pulled pork trial recipes underway; the first is still soaking in a bath….not literally but a herb and spice brine for 24hrs before it will have a dry rub spice mix all over and then cooked very slowly. The second had a spice rub then a browning all over to kick start the flavour development process and then cooked in a lager bath for 6 hours. The joint is then removed from the liquor and the liquor used as a base for the sauce to coat the pork. No final dressed dish photos as rather too late tonight but it does taste delish!😋
