COCONUT LADDU WITH GULKAND AND DRY FRUITS FILLING
Coconut Laddu with Gulkand Dryfruit Filling
Ingredients
1 cup grated fresh coconut
1/2 cup condensed milk
1/2 cup milk powder
1/4 cup gulkand (rose petal jam)
1/4 cup mixed dry fruits (finely chopped almonds, cashews, and pistachios)
1 tablespoon ghee (clarified butter) or olive oil
1/2 teaspoon cardamom powder
2 tablespoons desiccated coconut (for rolling)
A pinch of salt
Instructions
In a pan, heat ghee (or olive oil) on medium heat. Add the grated fresh coconut and sauté for about 2 minutes until it becomes slightly aromatic.
Add the condensed milk, milk powder, and a pinch of salt to the pan. Mix well and cook on low heat, stirring continuously for about 5-7 minutes until the mixture thickens and starts to leave the sides of the pan.
Once the mixture is done, remove it from the heat and let it cool for a few minutes until it is manageable to handle.
Once cooled, divide the mixture into equal portions, about the size of a lime.
Take one portion of the mixture and flatten it slightly in your palm. Place a small teaspoon of gulkand and a few pieces of mixed dry fruits in the center.
Carefully fold the edges over the filling and roll it into a ball shape. Repeat this process for the remaining portions.
Roll each laddu in desiccated coconut to coat them evenly.
Place the prepared laddus on a plate and let them set for about 30 minutes before serving.
