We are going to team up with our good friends over at Dads Diner. We are looking at a collaboration of sorts.

Camp Brisket 2025 is in the bag, and it was worth every minute of waiting since I hit the waiting list in 2018.

Just another investment in knowledge and training to make sure we’re bringing our customers and class attendees the best food and experience we can 😀

It’s the ultimate geek out weekend for everything brisket, smokers, meat science, fuel, and pitmaster philosophy in Central Texas.

Happy New Year! It's Monday, January 6th and we're gearing up for another great year of Championship Que! You can find us on Saturday, January 11th at the first Regina Farmers' Market Cooperative event of the season. We'll be there from 10 to 2 in Banner Hall at REAL. Chili Crisp is a pretty common ingredient in Asian grocers. It looks wicked spicy but really isn’t; it’s loaded with fried garlic, shallots, and black beans. We’re pairing it with cherries for these succulent pork belly bites!

Sauce: enough for one half pork belly.

Chili Crisp 3/8 cup
Chopped cherry pie filling 1/2 cup
Apple cider vinegar 2 Tbsp
Honey 1/4 cup
Salt 2 tsp
Bbq sauce 1/4 cup

Smoked on: Yoder Smokers

Firewood: Pecan

🥃 Salted Caramel Whiskey-glazed chicken wings!

This special edition Last Mountain Distillery whiskey has been great on ice, but I had bigger plans 😀

Wings cooked on DrumBo with the sweet smoke of peach wood.

Season wings; and while they’re smokin’: mix up the glaze in a saucepan.

1. 1.5 cups of salted caramel whiskey - add this first and simmer until the liquid is reduced by 80%.

2. Whisk in the following:
1 cup brown sugar lightly packed
0.25 cup honey
1 TBSP sweet BBQ rub
1 Tsp mustard

🐔 Once your wings are crispy and reach an IT of 180°, remove from the smoker and toss with glaze.
