Because I'm Older and Have More Insurance AND the Anatomy of an Almost Failed Birthday Cake: Long story short...I don't have my stuff. Stuff that I need to bake. I need parchment paper. I need cake flour. I need offset spatulas. I need piping bags and tips. Didn't have any of that. But in the end, I got it done. Cemented that top layer together with stiff chocolate buttercream. Iced it with a freaking BUTCHER KNIFE. Smoothed the icing out with A DRYWALL KNIFE. Trimmed it up with a bent piping tip in a ziplock bag. But lookie here...RALPHIE HAS A MOST EXCELLENT CHOCOLATE STRAWBERRY CAKE FOR HIS 13TH BIRTHDAY!! HAPPY BIRTHDAY, RALPHIE!!

I am now officially retired from professionally cooking for others. I get to go out on a high note in that I was named a Top Five Finalist in Four States Living Magazine's 2018 Best of Texarkana for Best Caterer or Chef!! While I will be cooking for my husband...not giving up cooking all together...I just won't be doing it for profit. I intend to fill my days with gardening, photography, finishing and publishing my cookbook, and LOTS OF NAPS!! Don't worry...I will still post photos and recipes on this page...can't get rid of me completely!!

Yes, I am retiring as Bakery Director at Be the Blessing Job Training at Randy Sams'. I will post something profound, moving, heartwarming, charmingly hilarious, and Nobel prize worthy (you'll laugh! you'll cry! you'll be moved to donate large sums to charities) later about my time here. But long story short, I am not doing myself and the spinal fusion I had in July, any favors by continuing to stand, lift, bend, walk, twist, in a commercial kitchen.I'm supposed to be on light duty. Apparently, I have no idea what light duty is. I told my doctor it hurts when I work. And he said, "Don't do that. Stop. Quit. GO HOME." I am simply not physically able to continue. My last day is February 28th...because that is the day Freddie graduates from the program...I pinky promised him that I had his back and would be here until he graduated. So, as pinky promises go, I'm here now but will peel out of the parking lot and head to the hills at the end of February.

PS...Be the Blessing Job Training will CONTINUE! Searching for a bakery director!!

Possibly because there was a rip in the space-time continuum, I was nominated as one of the TOP FIVE BEST CHEF OR CATER in Texarkana. And...I ain't a chef. Just a fat gal that can cook. The other four are WAY more qualified than I. So. There ya go. And Randy Sams Outreach Shelter was nominated Best Charitable Organization. Do vote for them. But me...not a chef...more of...a cooker of food. And whiner of whines. That's the category they need for me. You can go to this link and vote.

"The tickets to Randy Sams' fundraiser Drawdown for a Handup are $100. Where does that money go?"
There is so much more to Randy Sams' Outreach Center in our new facilities located at 803 Spruce than just our bakery job training program. Did you know that the building also houses our chapel? The chapel can be used for prayer, reflective quiet time, meditation, or in times of crisis clergy members may come down and counsel those in need. Donations, proceeds from fundraisers such as our Drawdown, donated labor and supplies, made our chapel a reality.
Our fundraiser, Drawdown for a Hand Up, is September 28th. Tickets are $100 each and are good for admission for two people, a wonderful Italian Dinner, dessert of tiramisu cheesecake and cupcakes prepared by our Be the Blessing Job Training bakers, an open bar, entertainment, silent auction, AND a chance to win $5000. Only 150 tickets will be sold. Should you want to purchase one, please contact us either by messaging through this page, calling 903-280-7549 and asking for Cathy, or dropping by at 803 Spruce between the hours of 8 and 4.

Be the Blessing Job Training is no longer taking cake orders, instead we are focusing on our true and intended product, our people. But I would be remiss in not sharing some of the cakes we are finishing up that had been on order because of all of the hard work, love, and dedication that goes into each cake. This stuffing naked wedding cake is one of those cakes that took our breathe away!
