Embracing warming winter flavours on this very rainy day and working on a few celeriac dishes.
Celeriac isn't a vegetable I'd ever eaten growing up but now I love its sweet, nutty flavour and versatility as it can be eaten both raw and cooked.
Caramelised maple and mustard glazed celeriac steaks on a bed of butterbean pureè with roasted tenderstem broccoli and a new recipe herby cream sauce that I think will become a favourite on many more dishes 🌿💕
Winter is not my favourite season and it seems to have lasted forever so I'm moving into Spring (on the plate at least) with this fresh and zingy linguine with watercress, almond and lemon pesto.
The almond and lemon balances the peppery watercress which is really nutritious being high in both iron and vitamin C (which I really need right now as I'm getting over a really bad cold) 🌿💕
Oven baked stuffed aubergines... one of my favourite dishes. Not only delicious and filling it's very high in protein (made with tvp which I don't use as much as I probably should but it works really well in this dish) and it's hiding a melted "cheese" filling in the middle of the stuffing... 🌿💕
