These cute little pies are so delicious and barely a recipe! Exactly what i needed this weekend. Weve been so busy the last few weeks, this weekend ive just creashed a little so didnt want to think too hard about lunch boxes!!
Great hot or cold and a nice little lunchbox treat. These freeze really well, so this recipe makes a double batch, but you could easily halve the recipe no problem!
Pear and Ginger Mini Pies
Makes 24
800gm tinned pears, juice removed
1/4 cup Brown sugar
1 teaspoon Ginger
1 teaspoon Vanilla
5 sheets puff pastry ( i use Careme all butter puff)
1 egg, for egg wash
1. Preheat oven to 200 degrees, fan forced.
2. Place first four ingredients in a pot and cook over medium heat for 8-10 minutes until liquid evaporates and pears are soft. Mush some of the pears as you go. Place in fridge to cool for 10 minute
3. Cut 48 scone sized circles into you pastry. Put teaspoon amounts on half the circles.
4. Place second circle on top and using a fork, seal around the edges. Top with egg wash.
5. Place on to a lined tray and bake for 10 minutes or until top is golden and pastry is cooked through.
6. Serve warm with cream or cold as a delish little treat!

This is your reminder to invite your kids to cook with you. Yes it took 20 minutes instead of 10 BUT I got to hang out with my kid - the one that likes to sit in the dark a lot, playing video games. The one who sometimes grunts instead of speaks. They won’t always say yes, but when they do, it will be worth it.
This week we made chocolate truffles for the lunch box treat. I’m sure everyone has their own version that they love. These are ours, and the kids love them. You can absolutely use a food processor for the biscuits but honestly it’s so easy just to pop them in a bag and bash ‘em a few times, with less washing up. Free therapy too! 😂
Chocolate Truffles
Makes 30 balls.
250gm Marie or Arrowroot biscuits
1 cup desiccated coconut
1/3 cup cocoa
1 tin condensed milk
An extra half a cup coconut
1. Crush biscuits and add them plus remaining ingredients to bowl (except for the extra coconut).
2. Mix all together until a thick dough forms
3. On a flat plate add the extra coconut.
4. Roll dough into tablespoon sized balls and then roll in coconut.
5. Place truffles in fridge. The truffles will have a bit of crunch on the day you make them but will soften by the next day.

This is my Anzac biscuit recipe that I’ve tweaked and adjusted over the years. It is amazing!! Believe me when I say that you will need to double the recipe. They barely last 24 hours when I make a single batch.
I actually prefer the flavour when I replace the glucose syrup maple syrup but it’s not authentic, but feel free to go wild in our own kitchen!!
Anzac Biscuits - makes 20
Ingredients
100gm rolled oats
150g plain flour
200gm firmly packed brown sugar
50gm desiccated coconut
125gm butter, chopped
2 tablespoons golden syrup
2 tablespoons water
1/2 tsp baking soda
Method
1. Preheat oven to 160°C. Line baking tray with baking paper.
2. Combine oats, flour, sugar and coconut in a large bowl. Place butter, syrup and water in saucepan; stir over low heat until everything is melted. Stir in soda. Add wet ingredients to dry.
3. Roll level tablespoons of mixture into balls and flatten slightly. They will spread so leave room in between. Bake for 20 minutes or until golden; cool on trays. The longer you bake the less chewy they are.

Choc Peanut Butter Shortbread Slice.
Yes it is as amazingly delicious as it sounds. The base is super versatile. You can cook the shortbread as is, or you can add choc chips, sprinkles, a little vanilla, anything really. Make it your own. The base also freezes really well, so you can have some shortbread on hand for school treats or homemade chocolate truffles.
100gm brown sugar
200-250gm butter
350gm flour
50gm corn flour
100gm peanut butter
300gm choclate
1. Preheat oven at 190 degrees in a fan forced oven.
2. Add sugar and 200gm butter to a bowl. Mix until combined, but not creamed.
3. Add flour and cornflour. Use your hands to combine. This will take about 4-5 minutes. If the flour seems really dry add the other 50gm of butter.
4. Press mix into a lined 20cm square tin and poke holes about a third of the way down. Bake for 25-30 minutes or until it’s golden and set. Set aside to cool.
5. When base is cooled enough that you can comfortably put your hand on it, place chic and peanut butter into a bowl and microwave in 30 second intervals until soft and warm. Mix until smooth.
Pour over base and place in fridge for 4 hours to set.
6. Slice up and enjoy!
