I remember you coming to my job after school when you were about 7, and I would make you help me prep so we could get out of there early. We would dream about me owning my own restaurant one day, and that dream became a reality in catering. You have been there every step of the way. Even though you are not a fan of the food industry anymore 🤨, those skills and your knowledge made you an asset to a project like this. 7 years ago, armed with my great grandmother’s stuffed bell pepper recipe, my wisdom I gained from the kitchen’s of some of NOLA finest restaurants and my culinary degree. I embarked on a journey of independence and creativity and established Amaris Catering and Events. Who knew a year later I would be completely self employed and closer to my dream contract. And in year 7 I’d have my dream contract 4x over. Im so happy I answered the calling inside to take a chance on myself and start my lil business. I do this for my grandmother’s before me that cook that good food in them peoples houses & nola restaurants. Those lunch ladies that never got the credit. I named this business after my daughter & she took all of these pics ❤️. Thank you to every client for your business over these years. Every staff member who sacrificed your time for my dreams. Continue to Watch us grow & bloom 🌷💐🌷🌹🌻and call us but we are booked until August, but I’m sure we could figure something out!

🍐 Pear Tarte Tatin is a classic French dessert. FYI, I have a Culinary Arts degree and I was trained in French Cuisine. But I pride myself on my ability to incorporate other cuisines and flavors because deep down I’m just a foodie & I love to eat tasty food. ❤️

I received this amazing corn relish from .nola Omg it was so good. I made a couple of dishes from it and this was my favorite. I am calling it Amaris Niciose Salad and I substituted the the relish for capers. Yum 😋🐟🌽

Pan seared sea bass 🐟 topped with crawfish & capers sautéed in lemon butter, over a bed of cajun spiced roasted potatoes. Lol that was a mouthful. 😋

Essence Fest x Amaris Catering 2022!!
Just completed our second year as the backstage caterer of the Essence Festival. We provided breakfast, lunch, and dinner for both production crews and artist. We also provided meals to artist in the dressing rooms. So basically we catered the Superdome portion of the fest. This was the best team I have ever put together and I’m Looking forward to next year!!! Thank you thank you team. ~Chef Erin

I haven’t made lasagna since the pandemic for my boys. I made it for one student in particular who keeps asking for it. I do my best the give them what they want. It’s going to be hard for me to say bye to my babies 💙, I really enjoyed my work.
