Kulfi isn't ice cream like the West knows it, it's so much more.
Kulfi is a traditional Indian frozen dessert known for its rich, creamy texture and unique flavor. Unlike regular ice cream, kulfi is made by slowly simmering milk to reduce it, then sweetening it with sugar and flavoring it with ingredients like cardamom, saffron, pistachios, and almonds. The mixture is then poured into molds and frozen. This slow-cooking process gives kulfi its dense and luscious consistency. It's often enjoyed on a stick, similar to a popsicle, and is a popular treat during hot summer months. Kulfi comes in various flavors, including mango, rose, and malai (cream), each offering a distinct taste experience.
Since it's basically summer in America, I think it's time to start doing some Kulfi for my Aatma pop-ups. You ready?
