Cleaning and listening to some Greta Van Fleet, Slipknot, Thrice, Red Hot Chili Peppers, Ozzy, Halestorm, Dorothy, Paramore, Payale Royale, Ghost, Shinedown… What do you listen to while cleaning? I crank it up loud!!!! Glad my neighbors are almost a 1/4 mile away.

Owens birthday party is today and Mimi made a low sugar no bake eclair cake. I used sugar free vanilla pudding and a keto chocolate icing to lower the sugar content. (I doubled mine to make this big of a pan) It is delicious. Definitely a must try!!

Made an angel food mixed with crushed pineapple tonight for bunco and bunco got cancelled.

I topped it with whipped topping and toasted coconut. Hmmmm now what to do with it?

I like to cook and bake more on cold days to help supplement heat in the kitchen. Today and tomorrow I will be making a white cake with strawberry filling and cream cheese icing, chocolate chip cookies, peanut butter cookies, sugar free no bake cookies, trying out a sugar free muffin recipe and red velvet chex mix.

Dinners this weekend will be chicken lo mein with egg roll in a bowl and Irish beef stew with homemade crusty bread!

Question for my red velvet fans…what makes you like red velvet? a slight chocolate flavor but tastes mostly white? A deeper chocolate flavor without being a chocolate cake? I don’t like it so am going to try a few recipes to find the one that most people like. Help me out.
