Happy Veterans Day to all those who serve or has served in the military. comes from a military family and one of the reasons why she joined the military. It was the stories of her uncle's the lead her to select Germany as her first duty station. That tour changed her life and her palette she gained a love for international cuisine. Name a better duo than Sundays and banana pancakes? While we wait, try this gluten, dairy & refined sugar free banana oatmeal pancake recipe for breakfast this morning.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Yield: 8-9 small/medium pancakes⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients:⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 ripe bananas⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 eggs⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup gluten-free rolled oats⠀⠀⠀⠀⠀⠀⠀⠀⠀5 tsp cinnamon⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tsp baking powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 pinch of salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 c chopped walnuts (or other nut of choice)⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp coconut oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Directions:⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Combine everything but the nuts and coconut oil into a blender and blend until thick.⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Stir in walnuts or other nuts, along with any other add-ins (we also love blueberries and chocolate chips).⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Heat a large skillet over medium heat and lightly coat with coconut oil.⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Add 1/4 c of batter per pancake into the skillet. Cook for two minutes or until small bubbles begin to form on the top. Flip & cook for another two minutes or until golden brown and set through.⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. Repeat until you have used all the batter. Serve with your favorite pancake toppings and enjoy!

Chef Samone started out as a personal chef doing mostly in home cooking and private dinners. Things would change when 2 clients willing to pay for her equipment if she would cater their wedding. That was 19 years ago and still her love is private events because they are intimate and she gets to mingle with the guests. Nowadays you can find her on film sets, still bringing her charm and her love for creating a great experience for the crew. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Our Story

Roots: Born and raised in Brooklyn New York, Chef Samone’s first memory of cooking was with her Grandmother and Dad at the age of 9. Coming from a long line of family members who served in the United States Military; most of them enlisting in the Marines, Chef Samone has a huge passion for those who serve. At age 18 she enlisted into the US Army as a Food Specialist and was eventually stationed in Germany. There she was exposed to kitchen management, food service, and cooking for large quantities of people.

Education & Experience: She later studied Hospitality Management & Tourism and also graduated from Le Cordon Bleu with a degree in Culinary Arts. After completing her studies, Chef Samone gained a solid foundation in international cuisine by working in various restaurants throughout the Central Florida area. While working in the kitchen, Samone gained the realization that she was more passionate about interacting with guests and creating dining expeirences, than being behind the line.

A Low Point: In 2004 Chef Samone became homeless and when the business was just starting to take off, she experienced rocky times personally and professionally; she later wrote about it in her spiritual memoir Lily In The Valley published in 2007.

The Come Back: After remarrying in 2010 the road to rebuilding Wishful Concepts Catering in Central Florida began and Chef Samone was inspired to focus her passion for culinary. Together, Chef Samone and her husband built a new version of Wishful Concepts that provided a “one-stop shopping experience” for catering clients. Having built her first brick and mortar establishment debt free, Samone built her first catering facility in 2014.
