Yams vs. Sweet Potatoes: What's the Difference?

Sweet potato and yam are not the same but often used interchangeably in the United States. Two types of sweet potatoes: firm and soft.

Firm sweet potatoes are orange-fleshed and firmer. The soft, paler-fleshed sweet potatoes, called yams, have a creamy and fluffy texture after cooking.

What Are Yams?
Yams, not commonly found in U.S., have rough, brown skin, either white or purple flesh, and are starchier and drier in comparison to sweet potatoes. They are not that sweet. Yams are closely related to lilies and grasses.

What Are Sweet Potatoes?
When Columbus came to America in 1492, Native Americans were growing sweet potatoes. By the 16th century, sweet potatoes were being cultivated in the southern states, where they became a staple in the traditional cuisine. Sweet potatoes are slim and tapered with fairly thin, edible skin.

Apples, pagan festivities and marriage. are often associate with , which could partially stem from the seasonality of the fruit. But the significance of apples is also deep-rooted in mythology and folklore. Celtic and Pagan tradition placed apples as powerful sources for divination and prophecy, and when the Roman’s came to Britain, they brought their own prophetic associations with the humble fruit.

On the 1st of November, the Romans celebrated a harvest festival dedicated to the goddess Pomona, goddess of plenty and abundance. Part of the festivities involved unmarried, young people attempting to bite into an apple floating in water or suspended from a string. The first to bite into the apple would be deemed next in line to marry. This tradition became embedded in Celtic festivals, like Samhain, and has naturally been adopted into Halloween celebrations. One of the colloquial names given to the 31st October, in Britain at least, was ‘Snap-Apple Night’, deriving from this practice, and later developing into the modern Halloween game of ‘Bobbing-for-Apples’.

A beautiful story on how caprese was invented (not sure if it’s true). While there may have been people making dishes similar to caprese years before this, many people give credit to an Italian masonry worker for creating it. According to this story, the masonry worker created the dish in the 1920s, following the end of World War 1. The ingredients were not so much chosen for their taste, although they pair perfectly together, but because of patriotism. With green basil leaves, white tomatoes, and red tomatoes, caprese also serves as a tribute to the Italian flag. In fact, this isn’t the only famous dish that uses the colors of the Italian flag. Margherita pizza is often thought to have been originally made to honor Margherita of Savoy, Queen of Italy, and the unification of Italy.

JALAPEÑO CORNBREAD MUFFINS with CREAM CHEESE FILLING

Ingredients:

For the Cornbread Muffins:

1 cup all-purpose flour
1 cup yellow cornmeal
¼ cup granulated sugar
1 tbsp baking powder
½ tsp baking soda
½ tsp salt
1 cup buttermilk
½ cup unsalted butter, melted and cooled
2 large eggs
1 cup corn kernels (fresh, frozen, or canned, drained)
1-2 jalapeños, finely chopped (seeds removed for less heat)
½ cup shredded cheddar cheese (optional)

For the Cream Cheese Filling:
8 oz cream cheese, softened
2 tbsp granulated sugar
1 tsp garlic powder (optional for a savory twist)
1 tsp lime or lemon zest (optional, for brightness)

Instructions:

1. Preheat the Oven:

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.

2. Make the Cream Cheese Filling:
In a small bowl, beat the softened cream cheese, sugar, garlic powder (if using), and lime zest (if using) until smooth and creamy.
Set aside while you prepare the cornbread batter.

3. Prepare the Cornbread Batter:
In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, melted butter, and eggs until well combined.
Gradually add the wet ingredients to the dry ingredients, stirring just until combined.
Fold in the corn kernels, chopped jalapeños, and shredded cheddar cheese (if using) until evenly distributed.

4. Assemble the Muffins:
Spoon about 1-2 tablespoons of cornbread batter into the bottom of each muffin cup.
Add a heaping teaspoon of the cream cheese filling in the center of each muffin.
Top the cream cheese with another tablespoon or so of cornbread batter, making sure the filling is covered.

5. Bake the Muffins:
Bake in the preheated oven for 15-18 minutes, or until the muffins are golden brown and a toothpick inserted into the muffin (away from the cream cheese center) comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool slightly.

6. Serve:
Serve these Jalapeño Cornbread Muffins warm with butter, honey, or extra cream cheese. They’re delicious on their own or as a side to chili, soups, or BBQ! Enjoy!
