🔸 To help mitigate the cold, we will finally have online ordering back up and running! Place your order online, call ahead, or walk up to the window, we will also bring your order out to your vehicle when it's, ready so you don't have to stand out in the cold!

We all know the snow and ice storm is coming, so here is how that is going to effect us!
🔸 We WILL be closing early, but that will be determined by the timing of the freezing rain. We will edit this post when that happens, so comment on this if you'd like to be updated. We know our BBQ is worth risking your life driving in the weather for, but we're not going to allow that...
🔸 We have plenty of food prepared to have gotten us through a full Saturday, knowing we will be closing early we'd like to get it all moved. We're ready to make a deal with you if you're wanting to stock up for a few days, so let's haggle!
🔸We have a very limited quantity of pork belly burnt ends available today, they will probably be gone before noon, so hurry in if you want some!

Hey everyone! Holiday catering season is officially over, therefore we are able to open Thursday through Saturday EVERY WEEK for the foreseeable future and we're planning to stick to our current location to be more consistent for yall!
We are also working to expand to Wednesdays and be able to mitigate coverage for the food truck when catering gigs do arise so we don't have to close. Stay tuned for more info!
Weekly Schedule posts will now turn into weekly updates to bring you any specials or news to keep you in the loop with us.
Be on the lookout for a new menu update, new bottled sauces, and the Wednesday expansion coming in the near future!

My name is Trevor Mallard and I have a passion for creating great tasting food. My barbecue experience all started with training from American Royal ribbon winning instructors at the Culinary Center of Kansas City. I have been developing my craft of smoking meats and perfecting recipes through years of practice. All of my barbecue is made with my own homemade rubs and seasonings that have been developed for each specific meat. My barbecue is inspired by the sticky sweet and smokey KC style that everyone loves, but with my own personal touches. Rather than using woods like hickory that give the meats a heavy smoke flavor, I let the meat do the talking and use lighter fruit woods like cherry and peach. I also have developed techniques and flavor profiles for each type of meat that makes each one unique. You can choose any combination of options to customize your event, from my twice-smoked pulled pork or sliced brisket injected with an apple cider based mixture, to my specialty, Mallard’s sticky sweet ribs.
