Hash Brown Casserole
Ingredients…
1 pkg. (30oz) Hash Browns - I used O’Brien Potatoes
1c Shredded Cheddar Cheese
1 (16oz) Sour Cream
2 cans Cream of Celery Soup
1 small Onion - finely chopped
1/2c grated Parmesan
Directions …
Preheat oven to 400
Spray a 13x9 pan
Mix frozen hash browns, cheddar cheese, sour cream, soup, and onions in a bowl. Mix well.
Spread into baking dish.
Cover with foil and bake 30minutes.
——Take foil off —-
Sprinkle with Parmesan cheese.
Bake for 30-40 more minutes or until browned and tender.
Mom’s Pickled Kidney Bean Salad
Ingredients ….
🍴2 jumbo cans of kidney beans (light or dark) - rinsed well
🍴4- 5 stalks of Celery - finely diced
🍴1 small Onion - finely diced
🍴1 Green Pepper - finely diced
🍴2 cups White Vinegar
🍴3/4 c Water
🍴White Sugar
🍴Salt & Pepper
🍴Olive Oil
Directions ….
Place rinsed kidney beans in large bowl.
Add in finely diced celery, onion and green pepper.
Place vinegar & water in small bowl.
ADD salt, pepper, and sugar to taste.
Mix until sugar is totally dissolved.
Pour mixture over kidney beans & veggie mix.
Drizzle top with a generous pour of Olive Oil.
Mix well, cover, refrigerate and enjoy.
*** Prepare this to your own taste. Adjust celery, onion, green pepper amounts. Leave the veggies out you don’t care for. Let sit at room temp for 20 min and give a good mix before serving.
Bourbon Bacon Jam
Ingredients…
🥓12oz. bacon, cut into very small pieces
🥓1 large sweet onion, finely minced
🥓4-5 cloves garlic, finely minced
🥓2/3 C apple cider vinegar
🥓5-7 T brown sugar
🥓5 T bourbon
🥓5 T water
🥓Pinch of cayenne pepper
🥓Cracked pepper to taste
Directions…
🥓In a large skillet, sauté bacon pieces over medium heat until crispy.
If you have a lot of bacon grease drain more than half.
🥓Add onion and garlic, cooking until soft and very tender.
🥓Add cider vinegar, brown sugar, bourbon, water, cayenne pepper, and black pepper. Stir to combine. Bring to a boil, then simmer, stirring often, until liquid is almost cooked off. Mixture should be thick and syrupy.
🥓Use immediately, place into an airtight container and refrigerate for 2-4 weeks.
