An indulgent classic.

Hey lovely community, I’ve been away from the socials recently because I unfortunately tested positive with Covid last week.
I had to close for 10 days and cancel all the orders that I had on the calendar :(
It’s been very hard, physically with the symptoms and mentally seeing how this has affected so much my small business especially during Christmas times.
I am officially covid free now and starting to work again from tomorrow.

🔅PECAN, BANANA CARAMEL BAR🔅

This last flavour pairing is something I learnt and absolutely loved once I moved here in London.
There is just a special connection between bananas and pecans, which is made even better from the dark chocolate.

The bar is composed of the moistest caramel sponge, caramelised banana jam, a dark 53% pecan whipped ganache, pecan praline and a chewy pecan caramel.
Considering the complexity of flavours I decided to finish this off with a simple and not too intense dark chocolate glaze.

The main ingredient of this bar is the glorious buttery pecan, which I wanted to explore in many different ways giving you the chance to explore a world of different sensations. The banana jam adds an unexpected sweetness and create the perfect balance with the bitterness of the chocolate♥️

The second bar just had to be a gianduia one.
Gianduia is a hazelnut chocolate spread created in north Italy where the best hazelnuts come from.

Hazelnut is my favourite ever nut and this bar celebrates it in many ways.

The bar is composed of a brown butter hazelnut sponge, a crunchy homemade dark 53% chocolate gianduia spread with hazelnut paste and praline, a lovely sour cherry jam with a hint of lemon and a whipped gianduia praline ganache, all glazed in milk chocolate and nibbed hazelnuts.

What I love the most about this bar is the amount of textures you’ll find; crunch, creamy, jelly.. there is just a perfect balance with the sourness of the cherry jam, the earthy hazelnuts and warmth of the milk chocolate ♥️

🔅ORANGE, PISTACHIO AND WHITE CHOCOLATE BAR🔅

I always like tasting my cakes in order, the best way to eat the gourmet chocolate bars is starting from the white chocolate one!

The flavour palette reminds me of my childhood when during Christmas time we literally buy tons of nougat covered in chocolate, panettoni and sweets. It was common to find this combination in everything since white chocolate is my father’s favourite thing while pistachio is my mom’s.

The bar is composed of a chewy pistachio daquoise, homemade orange jam, pistachio ganache, whipped white chocolate orange ganache and pistachio praline, all covered in a white chocolate orange zest glaze♥️

This bar is the lightest of all of them, not overly sweet, it will make your tastebuds dance between the round nuttiness slightly salty pistachio flavour, the tart orange jam, and the creamy white chocolate.

They are finally here! I’m beyond excited to add these on the menu and website for winter!🤩

I have developed three gourmet chocolate bars that will absolutely blow your mind, I was mainly inspired by traditional flavours we have in Italy during winter and some combinations I love.

They will be available to preorder for Christmas and will come in a festive packaging, then shipped with Royal Mail.

They make a perfect gift for foodie friends too!

What I love the most about pastry is how it can vary so much depending on the country and culinary traditions where it was created.

Italian patisserie is rich of traditional seasonal pastry and desserts for every occasion, from cornetti and panettoni to amaretti and nougat, gelato and pies.. the list is infinite!

The process that I enjoy the most is making the layered cake. So simple and yet so delicious, our traditional cakes are composed of a perfect balance of light egg sponge soaked in syrup, creams for filling and whipped cream for decoration.

The cakes are extremely moist and with the softest texture.
This is a vanilla sponge soaked in sugar syrup, chocolate pastry cream and chocolate ganache.

How was your first week of life finally going back to normal? ⭐️
I hope it was as colourful as this heart cake that I made for a bespoke order 💕

You might have noticed I wasn’t very sociable on socials for the past days😅, and that’s because I enjoyed time outside with friends FINALLY eating in restaurants and drinking pints of beers in pubs🤩
I really just needed some time off after the busiest months I had (Thank you♥️) to recharge the batteries and focus on my personal life!
I hope you all have amazing plans and reservations for this weekend, it feels so incredible seeing London being back to life, isn’t it?⭐️

Nothing better than a slice of cake to celebrate things starting to go back to normal!

This cake is a celebration for pistachios and it’s composed of a pistachio cremeux, vanilla bean bavarois, pistachio sponge, white chocolate and pistachio Feuilletine base and a pistachio glaze.

All made with homemade pistachio praline paste and that’s what makes it so special.

I’m genuinely so happy to see how Meraki’s reaching more and more people every month♥️
They said the first 2 years of having your own business are the hardest and you could either create something amazing or fail big time.. The first official year of Meraki is gone and I’m amused by all the achievements and goals I’ve reached.

I have big plans for this year and hopefully it won’t be super hard to achieve them!
