🇯🇲 Peanut Drops Recipe

INGREDIENTS

* 2 Cups Raw Peanuts
* 6 Cups Water
* 1½ Cup Cane Sugar
* ¼ Teaspoon Salt
* ½ Inch Fresh Ginger Grated
* ½ Teaspoon Ground CinnamonOptional
* ½ Teaspoon Grated Nutmeg Optional
* ½ Teaspoon Vanilla Extract Optional
INSTRUCTIONS


* Place a medium saucepan on high heat.�
* Add raw peanuts, water, salt, grated ginger and cane sugar ( also add the optional spices, if desired).��Stir until all the sugar is dissolved. �
* Once the peanuts are boiling, stir in the ground cinnamon and vanilla extract and continue to boil on high heat.�
* Continue boiling for another 30 minutes, uncovered and stirring every 10 minutes or so. �
* Once ¾ of the water evaporates, reduce the flame to medium.�
* Continue stirring until the mixture is thick and syrupy and all peanuts are coated in caramelized sugar. ��This step should take no more than 10 minutes.�
* Drop about 2-3 tablespoons of peanut mixture onto a non stick baking tray.�
COOLING
* You may allow the peanut drops to sit at room temperature or place in the refrigerator for 10 minutes.�

Trinidad 🇹🇹 Inspired Tamarind Sauce Recipe

8 oz Sweet Tamarind Pods, Deshelled
1 Teaspoon Baking Soda
3 Cup Boiling Hot Water
½ Teaspoon Pink Himalayan Salt
½ Teaspoon Ground Cumin
3 Garlic Cloves, Minced
1 Tablespoon Chadon Beni, Chiffonade
Cane Sugar, to Taste

In a large bowl, add tamarind pods, baking soda and hot water. Stir using a wooden spoon, to combine and allow to sit for about 30 minutes.
Baking soda and hot water will help in softening the tamarind pods.

Using a wooden spoon or whisk, break the tamarind flesh apart from the seeds.
Remove the visible seeds; Most seeds are very dark brown but there may be some seeds that are very light in color. The seeds should easily slide out the pods once softened so they will be easy to identify.

Add tamarind pulp to a sauce pan and bring to a simmer. Stir in ground cumin, minced garlic and pink himalayan salt.

Continue to simmer on low heat for about 5 minutes. Add chiffonade chandon beni and stir to combine.

Remove from heat and cool before serving.

Fried Dumpling Stuffed with Cheese Recipe

INGREDIENTS
2 Cup All Purpose Flour
4 TeaspoonsBaking Powder
1 Teaspoon Salt
½ Cup Warm Water
1 Cup Cheese, Shredded ( Any Cheese You Prefer)
Vegetable Oil for Frying

INSTRUCTIONS

How To Make the Fried Dumpling Dough

In a large bowl, add all purpose flour, baking powder and salt.

Using a whisk or clean hands, combine all ingredients to incorporate.

Make a well and add pour in water.

Gently work the dry mixture into the water to form a dough. Continue kneading until the dough is soft and smooth.

Cover with a towel and rest until the oil is heated and ready for frying.

How to Fry The Fried Dumpling Dough

Heat about an inch of oil in a large and thick skillet over medium high heat.

Once oil is heated, break pieces of dough and start to form each dumpling into a flat biscuit shape.

Once the dough is flat, place a pinch of cheese into the center of the dough and gently fold the edges into the middle to seal the cheese into the dumplings.

Fry on each side for 3-5 minutes, flipping every 60 seconds, until golden brown.
Drain excess oil on a paper towel and serve.

🇯🇲 Coconut Drops Recipe 🇯🇲

2 Cups Dried Coconut Flesh, Diced
3 Cups Water
1 Cup Cane Sugar
1 Tablespoons Fresh Ginger, Grated or 1 Teaspoon Ginger Powder
¼ Teaspoon Grated Nutmeg, Optional
¼ Teaspoon Salt

Yield 6 Servings
Prep Time 45 Minutes
Cooking Time 1 Hour

Brush a baking tray with coconut oil and set aside.

In a medium saucepan, bring water and diced coconut to a boil on high heat.

Once water and coconut comes to a boil, add organic cane sugar, ginger, pink himalyan salt and nutmeg. Stir to ensure all the sugar is dissolved.

Continue boiling at a high heat for 10 minutes, or until half the liquid is reduced. Stir occasionally to prevent the sugar from burning.

Reduce the heat to a medium low heat and simmer until the mixture becomes thick but easy to pour. The mixture should be sticky but droopy in order for the coconut drops to form.

On the baking tray, drop 2 tablespoons of coconut drops mixture in one spot, creating somewhat of a circular shape. Repeat the process, placing each coconut drops 1-2 inches apart, until all is done..

Allow the coconut drops to cool at room temperature before removing from the tray. This usually takes 3-6 hours.
